- Ghee (clarified butter) – 1 tbsp
- Milk – 500 ml (about 2 cups)

- Cashews – 6, halved
- Melon seeds – 1 tsp
- Raisins – 1 tsp
- Chironji (charoli nuts) – ½ tsp
- Saffron strands – a pinch
- Cardamom powder – ½ tsp
- Sugar – ¼ cup (adjust to taste)
Method
Step 1 – Roast the nuts and makhana
Heat 1 tbsp ghee in a heavy-bottomed pan or kadhai over medium heat.
Add almonds, cashews, melon seeds, chironji, and raisins. Roast for 1–2 minutes until they turn slightly golden.
Add 1 cup makhana to the pan and stir-fry for 2–3 minutes until the makhana becomes crisp and slightly golden.
Remove the roasted makhana and nuts from the pan and set aside.
Step 2 – Prepare the milk base
- In the same pan, pour 500 ml of milk and bring it to a gentle boil over medium heat.
- Once the milk starts bubbling, reduce the heat to low.
Step 3 – Combine ingredients
- Add a pinch of saffron to the milk.
- Stir in the roasted makhana and nuts.
- Simmer gently on low heat for 9–10 minutes, stirring occasionally to avoid sticking.
Step 4 – Sweeten and flavor
- Add sugar and continue cooking for another 5 minutes until it dissolves completely.
- Sprinkle ½ tsp cardamom powder for a fragrant finish and mix well.
Step 5 – Serve
- Let the kheer cool slightly to room temperature or serve warm.
- Garnish with a few extra nuts or saffron strands for a beautiful presentation.
