1. Coconut & Peanut Chutney
This creamy coconut and peanut chutney is rich, mildly spicy, and incredibly refreshing. The combination of fresh coconut, roasted peanut powder, and yogurt creates a smooth and flavorful accompaniment for fasting snacks.
Ingredients
- ½ cup fresh coconut, chopped
- 1 green chili
- 1 small piece ginger
- 2 tablespoons peanut powder
- 2 tablespoons curd (yogurt)
- ½ teaspoon cumin powder
- ½ teaspoon sugar
- Rock salt (Sendha Namak), to taste
- Water, as required
Method
- Add the chopped fresh coconut – 1/2 cup to a blender jar. Add the green chili – 1 and ginger – 1 small piece
- Add peanut powder 2 tbsp, curd – 2 tbsp, cumin powder – 1/2 tsp, sugar – 1/2 tsp, and rock salt – as per taste.
- Pour in a little water and blend until smooth. Add more water as needed to achieve your preferred consistency.
- Transfer to a serving bowl and serve immediately with vrat pakoras, sabudana vada, or any fasting meal.
Tips
- Use freshly grated coconut for the best flavor.
- Adjust the green chili according to your spice preference.
- For a thicker chutney, use less water while blending.
- Serve chilled for a refreshing taste.
2. Coriander & Tomato Chutney
Fresh, vibrant, and slightly tangy, this coriander and tomato chutney is a wonderful accompaniment to fasting snacks. The addition of peanut powder gives it a pleasant nutty texture and flavor.
Method
- Place the chopped tomato – 1, green chili – 1, small piece of ginger, and 1/4 cup fresh coriander leaves in a blender jar.
- Add 1 tbsp peanut powder, 1/2 tsp cumin powder, 1/2 tsp sugar, and rock salt as per taste.
- Add a little water and blend until smooth and creamy.
- Transfer to a bowl and enjoy with fasting cutlets, pakoras, or other vrat delicacies.
Tips
- Use ripe tomatoes for a naturally sweet flavor.
- Add extra coriander for a fresher taste.
- This chutney tastes best when consumed fresh.
- Chill for 15–20 minutes before serving for enhanced flavor.
3. Sweet and Tangy Dates & Dry Mango Chutney
This sweet, tangy, and mildly spiced chutney is perfect for vrat chaat, dahi vada, and a variety of fasting snacks. It stores well and can be prepared in advance.
Ingredients
- ½ cup dates, seeds removed
- ½ cup jaggery
- ¼ cup raw mango powder (amchur powder)
- ½ teaspoon cumin powder
- ¼ teaspoon black pepper powder
- ½ teaspoon rock salt (Sendha Namak)
- 1 cup water
Method
- Add the deseeded dates 1/2 cup, jaggery 1/2 cup, and ½ cup water to a saucepan.
- Cook over medium heat, stirring occasionally, until the jaggery melts completely and the dates become soft.
- Once the dates are cooked, add amchur powder 1/4 cup, cumin powder 1/2 tsp, black pepper powder 1/4 tsp , and rock salt 1/2 tsp.
- Mix everything well.
- Add the remaining water and cook on low heat for 7–8 minutes, allowing the flavors to blend together.
- Allow the mixture to cool completely.
- Transfer to a blender and blend into a smooth chutney. Add a little water if required to adjust the consistency.
- Serve immediately or store in an airtight container in the refrigerator.
Tips
- You can substitute jaggery with sugar if preferred.
- Adjust the amount of amchur powder according to your desired level of tanginess.
- This chutney pairs beautifully with vrat chaat and dahi vada.
- Store in the refrigerator for up to 15 days.
