Ingredients -
- Oil – 4 tbsp
- Cloves – 2
- Green cardamom – 1
- Cinnamon stick – a small piece
- Black peppercorns – 5
- Cumin seeds – ¼ tsp
- Ginger – 1 inch piece (crushed)
- Green chili – 1 (slit)
- Garlic pods – 5 (crushed)
- Onion – 1 (sliced lengthwise)
- Tomato – 1 (roughly chopped)
- Butter – ½ tsp
- Chopped garlic – 1 tbsp
- Cashews – ½ cup
- Mushroom – 200 gm (washed and cut into medium-sized pieces)
- Turmeric powder – ¼ tsp
- Red chili powder – 1 tsp
- Salt – as per taste
- Fresh coriander leaves – for garnish
- Fresh cream – 1 tbsp (optional)
Method –
1. First, in a pan, add 2 tablespoons of oil. Add 1 green cardamom, 5-6 black peppercorns, 2 cloves, and a small piece of cinnamon stick. Then add ¼ teaspoon cumin seeds, 1-inch crushed ginger, 1 green chili, and 5-6 crushed garlic cloves. Add 1 onion sliced and sauté it until it becomes lightly golden brown.
2. Once the onions are lightly fried, add 1 roughly chopped tomato and stir-fry until soft. After the onion and tomato are well cooked, let it cool down, then grind it into a fine paste and set it aside.
3. Now, in the same pan, add 2 tablespoons of oil and ½ teaspoon butter (to enhance the flavor). Add 1 tablespoon finely chopped garlic and fry for 1-2 minutes. Then, add ½ cup cashews and stir-fry until they turn a light golden color.
4. Next, add mushrooms (1 packet, washed and cut into medium-sized pieces). Fry them on high heat for 2-3 minutes. Add ¼ teaspoon turmeric powder, 1 teaspoon red chili powder, and the onion-tomato paste. Stir and cook this mixture for 4-5 minutes.
5. Now, add some hot water to the mixture and mix everything well. Add salt to taste and stir. Cover the pan and let it simmer on low heat for about 15 minutes.
6. Your flavorful Mushroom Cashew Masala is now ready! Finally, garnish with chopped coriander leaves and
1 tablespoon of fresh cream. Mix well and turn off the heat.
