Ingredients
- Paneer (cottage cheese) – 200 gm, cut into cubes
- Tomato (roughly chopped) – 2
- Green chili – 2
- Ginger – ½ inch piece
- Soaked Cashews – 5
- Magaj – 1 tsp
- Red chili powder – 1 tbsp
- Oil – 2 tbsp
- Butter – 1 + 1/2 tsp
- Whole spices –
- Bay leaf – 1
- Cinnamon stick – 1
- Green cardamom – 2
- Black cardamom – 1
- Finely chopped onion – 1
- Ginger & garlic paste – ½ tsp
- Turmeric powder – ¼ + 1/8 tsp
- Red chili powder – 1 + ¼ tsp
- Coriander powder – 1 tsp
- Garam masala – ½ + 1/8 tsp
- Salt – as per taste
- Sugar – 1/8 tsp
- Kasoori methi – ¼ tsp
- Fresh cream – 2 tbsp
- Fresh coriander leaves – to garnish
Method
Step 1: Prepare the Tomato Paste
- In a blender, add 2 roughly chopped tomatoes, ½ inch ginger, 2 green chilies, 4-5 soaked cashews, 1 tsp soaked magaj (melon seeds),1 tbsp Kashmiri red chili powder.
- Blend everything into a smooth paste. Your tomato paste is now ready.
Step 2: Make the Gravy
- Heat 1 tbsp oil and a little butter in a pan.
- Add the whole spices: 1 bay leaf, a small piece of cinnamon, 2 green cardamoms, 1 black cardamom, and ½ tsp cumin seeds.
- Once the spices crackle, add 1 finely chopped onion (or onion paste). Sauté the onions until they turn light brown.
- Add ½ tsp ginger-garlic paste and cook until the raw aroma disappears.
- Add the tomato paste and cook on low heat for 5-7 minutes.
- Now add the spice, ¼ tsp turmeric powder, 1 tbsp red chili powder, 1 tsp coriander powder, ½ tsp garam masala, Salt to taste and 1/8 tsp sugar
- Add a little water and cook the gravy covered for 9-10 minutes, until the oil separates.
Step 3: Stir fry the Paneer
- In another pan, heat 1 tbsp oil and a little butter.
- Add 200 gm of paneer cubes, along with a pinch of turmeric, red chili powder, and garam masala.
- Lightly fry the paneer cubes until golden on all sides. Set aside.
Step 4: Final Mixing and Serving
- Now remove lid, our masala is cooked well so add ¼ tsp kasoori methi, stir fried paneer cubes and mix it well.
- Add a little hot water, cover, and let it simmer for 5-7 minutes.
- Finally, stir in 2 tbsp of fresh cream and garnish with freshly chopped coriander leaves. Turn off the flame and serve Hotel style paneer makhani with roti, naan, rice.
