Sev Tamatar Ki Sabji recipe

Ingredients
- Sev – 1 cup
- Tomatoes – 2 (paste)
- Tomato – ½ (chopped into big pieces)
- Green chili – 1
- Ghee – 1.5 tbsp
- Mustard seeds – ¼ tsp
- Cumin seeds – ½ tsp
- Curry leaves – 1 sprig
- Asafoetida (Hing) – a pinch (1/8 tsp)
- Turmeric powder – ¼ tsp
- Red chili powder – ½ tsp
- Coriander powder – 1 tsp
- Cumin powder – ¼ tsp
- Kitchen king masala – ½ tsp
- Salt – as per taste
- Garam masala – ½ tsp
- Jaggery – 1 tbsp
- Finely chopped coriander leaves – 1 tbsp
Method
- Firstly, heat a pan on medium flame and add 1.5 tablespoons of ghee (or oil).
- Once the ghee is hot, add ¼ teaspoon mustard seeds and ½ teaspoon cumin seeds. Let them crackle.
- Now add 1 finely chopped green chili and ½ teaspoon grated ginger. Sauté for a minute.
- Now, add 2 tomatoes (ground to a paste) and sauté well. Add a few curry leaves for an extra layer of flavor.
- Sprinkle a pinch of asafoetida (hing), ¼ teaspoon turmeric powder, ½ teaspoon red chili powder, 1 tablespoon coriander powder, ¼ teaspoon cumin powder, ½ teaspoon Kitchen King masala, and salt to taste.
- Cook the spices and tomato paste until the oil separates from the mixture.
- Toss in the remaining half tomato (chopped into big pieces) for some texture, and pour in a little hot water.
- Next add 1 tablespoon of jaggery to balance the tangy flavors, and simmer on high heat for 5-7 minutes.
- Finish with ½ teaspoon garam masala and garnish with freshly chopped coriander leaves.
- Finally, mix in 1 cup of sev, give it a quick stir, and immediately turn off the heat. The sev will absorb the gravy quickly and thicken the sabji. Now turn off the flame.
- Serve hot and enjoy the flavorful sev tamatar ki sabji. This dish pairs perfectly with roti, bhakari, or even rice!
Tips -
- To maintain its crunchy texture, add the sev just before serving and turn off the heat immediately. If left in the gravy for too long, the sev can become too soggy.
- If you like a thicker gravy, reduce the water a little while cooking. If you prefer more gravy, add extra water but ensure you cook it well to blend all the spices.
