Ingredients
For the Gravy
- Tomatoes – 3 (roughly chopped)
- Green chilies – 2
- Ginger – ½ inch piece
- Soaked melon seeds & cashews – 2 tbsp (for creaminess)
- Oil – 2 tbsp
- Butter – 1 tbsp
- Cumin seeds – ½ tsp
- Black cardamom – 1
- Small cinnamon stick – 1
- Bay leaf – 1
- Chopped coriander stems – ½ tsp
- Turmeric powder – ¼ tsp
- Red chili powder – ½ tsp
- Coriander powder – ½ tsp
- Garam masala – ¼ tsp
- Whisked curd (yogurt) – ½ cup
- Salt – to taste
For the Veg Chili Mili
- Oil – 1 tbsp
- Butter – 1 tbsp
- Paneer – 100 g (cut into thin slices)
- Green chilies – 2 (slit)
- Ginger – 1 inch (julienned)
- French beans – ¼ cup (chopped)
- Cabbage – ¼ cup (shredded)
- Carrot – ¼ cup (julienned)
- Capsicum (green, red, yellow) – ½ cup (sliced)
- Black pepper powder – ¼ tsp
- Salt – to taste
- Kasoori methi (dried fenugreek leaves) – 1 tsp (crushed)
- Fresh coriander leaves – 1 tbsp (chopped)
- Fresh cream – 2 tsp
Method
Step 1 – Prepare the Flavorful gravy
- In a blender jar, combine tomatoes, green chilies, ginger, and soaked melon seeds with cashews.
- Blend into a smooth paste. Add splash of water if needed for a silky cosistancy.
- Heat a oil and butter in a pan. Then add sumin seeds, cinanamon stick, black cardamom, and bay leaf. Let them release their aroma.
- Stir in chopped coriander stems for a fresh earthy note.
- Pour in the tomato cashew mixture. Rinse the blender jar with a little water and add that too – don’t waste any flavor!
- Now add spices, add turmeric powder, red chili powder, coriadner powder, and garam masal powder. Cook on low flame until the oil begins to separate from the sides.
- Lower the flame and gently add whisked curd. Stir Continuously to prevent it from curdling. Cook for 5 – 7 minutes until the greavy thicknes and the raw aroma disappears.
- Add salt as per taste and adjust the consistency with a bit of warm water. Cover and simmer for a few minutes.
- This gravy can be prepared ahead of time – its styas fresh in the fridge for up to 3 days and can be used as a base for many other paneer or vegetable curries..
Step 2 – Stir fry the Veggies and Paneer
- Heat oil and butter in another pan, Shallow fry the paneer slices on both side until golden. Set aside.
- In the same pan, add slit green chilies and juilenned ginger. Saute briefly until fragrant.
- Toss in French beans, cabbage, carrot, and all three colored capsicums. Stir fry on high flame for 2 -3 minutes. Keep the veggeies slightly crunchy for that restaurant style texture!
- Add black pepper and salt. Mix well and cook until the veggies are just tender but not soggy.
Step 3 – Bring it All together
- Return to our gravy and add the stir fried veggies.
- Sprinkle crushed kasoori methi and chopped fresh coriander.
- Gently add the golden paneer pieces and mix everything together carefully.
- Finish with a drizzle of fresh cream – this gives that glossy finish.
- Taste and adjust seasoning at this stage. Because of butter, cream and cashews, you might need very little extra salt..
Serve Veg Chili Mili with Paneer hot with, soft butter naan, Lachha Paratha, or simple bowl of jeera rice. Its creamy, mildly spiced flavour pairs beutifully with anything.!
