Ingredients
- Sweet potatoes – 2 (washed and peeled)
- Milk – 500 ml
- Ghee – 2 tablespoons
- Fox nuts (makhana) – ¼ cup
- Cashews – 1 tablespoon
- Raisins – 1 tablespoon
- Sugar – 2 tablespoons (adjust to taste)
- Cardamom powder – ¼ teaspoon
- Pistachios – for garnish
Method
- Start by washing and peeling the sweet potatoes. Grate them finely using a grater. There’s no need to boil them beforehand, they will soften nicely while cooking in the kheer.
- Now heat a pan, heat ½ tablespoon of ghee over medium heat. Add ¼ cup of fox nuts (makhana), along with a tablespoon each of cashews and raisins. Lightly fry them for about 2 minutes until the fox nuts are crispy. Once done, remove them from the pan and set aside.
- In the same pan, add another tablespoon of ghee and then add the grated sweet potatoes. Sauté them for about 4-5 minutes until they soften and turn slightly golden.
- Now pour in 500 ml of pre-boiled milk and mix well. If you like your kheer creamier, feel free to add more milk.
- Next add the fried fox nuts, cashews, and raisins back into the mixture. Stir everything together, cover the pan, and let it simmer on low heat for about 7-8 minutes. Stir occasionally to prevent sticking.
- Once the kheer has thickened, add 2 tablespoons of sugar (you can adjust this to your taste) along with ¼ teaspoon of cardamom powder. Mix well and let it cook for another 5 minutes, allowing the sugar to dissolve completely.
- Our sweet potato kheer is ready! You can serve it warm or chilled, garnished with fried cashews, raisins, and pistachios for added flavor.
