Traditional Gond Ke Laddu Recipe | Best Gond Ke Laddoo for Strength & Bones vrat friendly

As soon as winter arrives, one recipe becomes a must in every traditional Indian kitchen—Gond Ke Laddu. These rich, nourishing laddoos are specially made to keep the body warm, boost strength, and improve bone health during cold months. Growing up, I always saw my mother prepare a big batch of these laddoos at the start of winter, and we would enjoy one every day.

Made with edible gum (gond), jaggery, dry coconut, ghee, dry fruits, and warming spices, these laddoos are not only delicious but also incredibly healthy. The best part?
These laddoos are perfect for fasting (vrat/upvas) because they contain no flour at all.

Let’s learn how to make these super healthy, energy-boosting Gond Laddoos step by step

Ingredients

  • Dry coconut (grated) – 2 cups / 100 g
  • Jaggery (gud) – 1 cup / 120 g
  • Edible gum (gond) – ½ cup
  • Chopped nuts – 2 tbsp (30 g)
  • Ghee (clarified butter) – ⅓ cup / 75 g
  • Dry ginger powder (sonth) – 1 tsp
  • Cardamom powder – ¼ tsp
  • Coarsely ground dry dates – ½ cup
  • Cashews, raisins & melon seeds (magaz) – 2 tbsp

Method

Step 1: Dry Roast the Coconut

  1. Heat a pan on medium flame. Add the grated dry coconut and roast it lightly while stirring continuously.
    Do not brown it—just remove the raw smell.
  2. Once done, transfer it to a plate and keep aside.

Step 2: Fry the Edible Gum (Gond)

  1. In the same pan, add 2 tablespoons of ghee. Add the edible gum little by little—never all at once. Fry until each piece puffs up completely and turns crisp. There should be no raw sound left in the gond. Remove and keep aside.
  2. Total ghee used till now will be about 5 tablespoons.

Step 3: Roast the Dry Fruits & Dates

  1. Using the remaining ghee in the pan, add Cashews, almonds, raisins and Magaz (melon seeds) – 2 tbsp
  2. Lightly roast them.
  3. Now add the ½ cup coarsely ground dry dates and sauté for 2 minutes on low flame.
  4. Turn off the heat and transfer this mixture to a plate.

Step 4: Crush the Gond

  1. Once the fried gond cools slightly, crush it coarsely using A mortar & pestle Or a rolling pin
  2. Do not grind it into powder.

Step 5: Melt the Jaggery

  1. Place the pan back on low heat.
    Add 1 cup jaggery and ¼ cup water.
  2. Let the jaggery melt gently. No thick syrup is needed—just melt it completely.

Step 6: Combine Everything

  1. Turn off the heat and quickly add Roasted coconut, Crushed gond, Dry fruits & date mixture, 1 tsp dry ginger powder, ¼ tsp cardamom powder.
  2. Mix everything very well.
  3. Since no flour is used, these laddoos are perfect for vrat/fasting.

Step 7: Shape the Laddoos

  1. While the mixture is still warm, grease your hands with a little ghee and shape into laddoos immediately.
  2. They bind easily and beautifully. The entire process takes just 15 minutes!

  2. Shelf life: 2–3 weeks at room temperature, longer if refrigerated.
