Gut friendly healthy probiotic recipes

Ingredients
1. Fermented rice recipe ( Chawal Kanji) –
- Cooked rice – 1 cup
- Rice water – 1 cup
- Water – 1 cup
- Lemon slices – 2 (optional)
- Green chili – 1
- Curry leaves – 1 sprig
- Ginger (grated) – 1/4 tsp
- Salt – as per taste
- Ghee – 2 tbsp
- Homemade pickle – optional
- Fresh coriander leaves – 1 tsp
Method
- Firstly take clay pot or you can take any bowl. Next add 1 cup of leftover cooked rice.
- Add 1 cup of saved rice water (from the cooking rice) and 1 cup of regular water.
- Mix in 2 lemon slices (optional), 1 green chili, few curry leaves, 1/4 tsp grated ginger and salt to taste
- Now add 2 tbsp of ghee for richness, mix everything well, and leave the mixture covered overnight to ferment.
- By the next morning, your fermented rice or chawal kanji is ready. Serve with homemade pickle or fresh coriander for added flavor.

2. Ragi Malt recipe (Ambil)
- Ragi flour – 1/2 cup
- Water – 4 cups
- Curd – 3/4 cup
- Ginger (chopped) – 1/4 tsp
- Raw mango (chopped) -1 tsp (optional)
- Salt -as per taste
- Fresh coriander leaves – 1 tbsp
Method
- In a pan, take 1/2 cup ragi flour and mix with 4 cups of water, ensuring no lumps are formed.
- Heat the mixture on medium flame and stir continuously until it thickens.
- Once the mixture thickens, cover it and let it cook on low heat for 5 more minutes.
- Now turn off the flame and let it cool slightly.
- Once cooled, add 3/4 cup curd, chopped ginger, raw mango (optional) and salt as per taste. Mix well with whisk until smooth.
- Finally garnish with fresh coriander leaves and serve chilled or at room temperature for a refreshing, tangy drink.
