Ingredients

  • Frozen mango pieces – 2  medium-sized mangoes (cut into pieces and frozen for 2 hours)
  • Curd – 1 cup
  • Fox nut (Mankhana)  – ½ cup
  • Cashew nuts – 10
  • Honey – 4 tbsp

Method

  1. Firstly, peel and cut 2 ripe mangoes into pieces and freeze them for at least 2 hours. Freezing the mango pieces helps give the ice cream a thick, creamy texture.
  2. Now in a blender, add the frozen mango pieces, ½ cup makhana, 10 cashews, and 1 cup of fresh curd. Makhana adds a nice crunch and a healthy twist, while cashews make the ice cream extra creamy.
  3. Instead of sugar, add 4 tablespoons of honey to naturally sweeten the ice cream. Honey not only enhances the sweetness but also adds a depth of flavor.
  4. Now blend all the ingredients until smooth and creamy. You can also taste the mixture at this point and add more honey if you prefer it sweeter.
  5. Pour the mixture into an airtight container. For extra texture, you can add a few more mango pieces on top and gently mix them in. Cover the container and freeze the mixture for at least 4-6 hours, or until it’s fully set.
