We’ve all heard people say, “Eat Healthy!” – but few actually turn those words into action. Our body needs protein for every organ to funtion properly, and the the easiest, most natural source of plant-based protein is right in our kitchen — sprouts!
Today, I’m sharing a delicious recipe that proves healthy food doesn’t have to be boring. This Sprouted Moong and Chickpea Chaat (or Salad) is chatpata, flavorful, and bursting with color, texture, and nutrients. Made without oil, cooked in minutes, and filled with crunchy vegetables, seeds, and tangy spices, this salad is perfect as a post-workout meal, evening snack, or even a light dinner.
The best part? You don’t need to cook anything — eating sprouts raw helps retain all their enzymes and nutrients, making this dish a true superfood salad!

Ingredients
Main Ingredients:
- Sprouted green moong – 1 cup
- Sprouted chickpeas – 1 cup
- Fresh coconut slices – ½ cup
- Finely chopped onion – 1 small
- Finely chopped tomato – 1 small
- Finely shredded cabbage – 2 tbsp
- Grated carrot – 1 tbsp
- Chopped cucumber – 2 tbsp
- Finely chopped green chili – 1
- Finely chopped raw mango – 1 tbsp
- Roasted peanuts – 2 tbsp
- Pomegranate seeds – 2 tbsp
- Pumpkin seeds – 1 tbsp
- Fresh ginger – 1-inch piece (finely julienned)
- Fresh coriander leaves – 1 tbsp (chopped)
- Lemon juice – 1 tsp
For the Spice Mix:
- Red chili powder – ½ tsp
- Roasted cumin powder – ½ tsp + a pinch for garnish
- Raw mango (amchur) powder – ½ tsp
- Chaat masala – ½ tsp
- Dry ginger powder – ¼ tsp
- Black pepper – ¼ tsp
- Black salt – ¼ tsp
- Regular salt – to taste
Optional:
- Green chutney – 1 tsp (mint-coriander chutney adds a spicy kick)
- Sweet tamarind chutney – 1 tsp (for a tangy-sweet balance)
- Paneer cubes – for extra protein
Method
- Firstly, take a small bowl, combine red chili pwoder, roasted cumin powder, dry mango powder, chat masala, dry ginger powder, black pepper, black salt and regular salt.
- Then, take a large mixing bowl, add sprouted moong, and sprouted chickpeas. (keep them raw to preserve their full nutritional value. Boiling or roasting destroys enzymes and reduces protein quality)
- Next add green chutney and sweet tamarind chutney (optional) to the sprouts and mix lightly. Now add the chopped onion, tomato, cabbage, carrot, cucumber, raw mango, green chili and ginger. Toss gently until everything is well combined..
- Mix in roasted peanuts, pumpkin seeds, fresh coconut slices and pomegranate seeds. Sprinkle 1/2 tsp of your prepared chaat masala mix and toss again.
- Add lemon juice and fresh coriander leaves, mix once more and taste – adjust salt or spice as you like.
- Transfer the salad to a serving plate. Garnish witha sprinkle of roasted cumin powder, a few strands of ginger, some pomegranate seeds, and fresh coriadner.
- Enjoy this vibrant, tangy and nutrient – packed Sprouted Moong & Chickpeas Salad immediately!
Tips & Variations
- Add Paneer or Tofu: For an extra protein boost.
- Make it Jain-Friendly: Skip onion and garlic; use more cucumber and pomegranate instead.
- Add a Crunchy Twist: Sprinkle a handful of sev or crushed roasted chana just before serving.
- Storage Tip: Mix the chutneys only when ready to serve, or the salad may become soggy.
- For Kids: Add a little sweet chutney or grated apple to balance the spice.
