Halwai style Moong dal ki burfi

Ingredients
- Moong dal (yellow lentils) – ½ cup
- Ghee – ¼ cup
- Sugar – 1 cup
- Mawa (khoya) – 100 gm
- Water – ½ cup
- Cardamom powder – ¼ tsp
- Silver vark (optional)
- Pistachios slices – 1 tsp
- Orange food color – 1/8 tsp
Method
- Start by soaking ½ cup of moong dal in water for 2 hours. Once soaked, drain the water and grind the dal into a coarse paste using a blender or mixer. Make sure it’s not too smooth.
- In a pan, heat 2 tablespoons of ghee (you’ll need ¼ cup in total). Add the ground moong dal to the pan and begin roasting it on medium to low heat.
- Keep stirring the mixture constantly to avoid it sticking to the pan. The dal needs to be roasted well until it turns golden brown and loses its raw smell. This step is crucial for enhancing the flavor.
- Once the dal is roasted and turns a nice golden brown, add 100 gm of mawa (you can use milk if you don’t have mawa). Cook the mixture for another 5-7 minutes, stirring constantly.
- In a separate pan, add 1 cup of sugar and ½ cup of water. Cook this until the sugar completely dissolves and forms a one-thread consistency syrup. Add a pinch of orange food color and ¼ tsp of cardamom powder to the syrup for flavor.
- Now, add the roasted moong dal and mawa mixture to the sugar syrup. Stir everything together and cook for another 4-5 minutes until the mixture thickens and starts leaving the sides of the pan.
- Grease a tray or plate with ghee and pour the mixture into it. Spread it evenly. Let it cool and set for about 30 minutes.
- Once set, you can apply silver vark on top (optional) and garnish with sliced pistachios or almonds. Cut the burfi into your desired shape and size.
