Paneer kachori & Bhandare vale Aloo ki sabji

Today, I’m excited to share a delicious recipe for Paneer Kachori with Bhandare vale Aloo Ki Sabji. If you’re looking for a tasty snack or a comforting meal, you’ve come to the right place! Ingredients
For Kachori:
- All-purpose flour – 1 ½ cups
- Carom seeds (Ajwain) – ¼ tsp
- Salt – to taste
- Oil – 3 tbsp
- Water – as required
- Paneer – 150 gm, grated
- Chopped ginger & green chili – ½ tbsp
- Chopped fresh coriander – 1 tbsp
- Red chili powder – ¼ tsp
- Turmeric powder – 1/8 tsp
- Cumin seeds – ¼ tsp
- Garam masala powder – ¼ tsp
- Chaat masala – ¼ tsp
- Sugar – 1/8 tsp
Method -
Step 1: Prepare the Kachori Dough
- Firstly, in a mixing bowl, combine 1 ½ cups of all-purpose flour, ¼ tsp carom seeds, and salt to taste.
- Now add 3 tbsp of oil and mix it well into the flour until it resembles breadcrumbs. This helps make the outer layer crispy.
- Gradually add water and knead into a semi-soft dough. Let the dough rest for 20-30 minutes.
Step 2: Make the Paneer Filling
- For filling take paneer and grate it well.
- Add ½ tbsp of chopped ginger and green chili, 1 tbsp of chopped fresh coriander, ¼ tsp of red chili powder, ⅛ tsp of turmeric powder, ¼ tsp of cumin seeds, ¼ tsp of garam masala, ¼ tsp of chaat masala, salt to taste, and ⅛ tsp of sugar.
- Mix all the ingredients well to combine. Our filling is ready!
Step 3: Shape the Kachoris
- Knead the dough again and divide it into small balls.
- Roll out each ball into a small circle (like a small puri).
- Place a spoonful of the paneer filling in the center and gather the edges to seal the kachori. Gently flatten it with your palm to ensure even cooking and to prevent bursting during frying.
- Repeat for all the kachoris.
Step 4: Fry the Kachoris
- Heat oil in a deep frying pan over medium heat.
- Once hot, carefully add the kachoris, frying them on low heat to achieve a crisp exterior.

For Aloo Ki Sabji:
- Boiled and mashed potatoes – 4
- Mustard oil – 2 tbsp
- Bay leaf – 1
- Crushed coriander seeds – 2 tsp
- Fennel seeds – ¼ tsp
- Cumin seeds – ½ tsp
- Crushed garlic & green chili – 1 tsp
- Gram flour (Besan) – 1 tsp
- Tomato paste – 2 medium
- Turmeric powder – ¼ tsp
- Red chili powder – ½ tsp
- Coriander powder – ¼ tsp
- Chaat masala – ¼ tsp
- Garam masala – ¼ tsp
- Hing (asafoetida) – ¼ tsp
- Green chilies – 2
- Salt – to taste
- Water – 1.5 cups
- Kasuri methi (dried fenugreek leaves) – ¼ tsp
- Fresh coriander leaves (chopped) – 1 tbsp,
Method -
- In a kadai, heat 2 tbsp of mustard oil until hot.
- Add 1 bay leaf and sauté for a few seconds.
- Then, add 2 tsp of crushed coriander seeds, ¼ tsp of fennel seeds, and ½ tsp of cumin seeds. Stir well.
- Add 1 tsp of crushed garlic and green chili paste and sauté for 1 minute.
- Mix in 1 tsp of gram flour / besan and roast for another minute.
- Add 2 medium tomatoes (pureed) and cook for about 5-7 minutes until the oil separates from the mixture.
- Now add spices – ¼ tsp of turmeric powder, ½ tsp of red chili powder, ¼ tsp of coriander powder, ¼ tsp of chaat masala, ¼ tsp of garam masala, and ¼ tsp of hing. Stir well.
- Add 1.5 cups of hot water and bring it to a boil.
- Once boiling, add the boiled and mashed potatoes. Mix everything thoroughly.
- Adjust the consistency by adding more water if needed and let it simmer for 8-9 minutes.
- Finally, add ¼ tsp of kasuri methi and mix in fresh coriander leaves before serving.
Serve the crispy Paneer Kachoris with the bhandare vale Aloo Ki Sabji. You can accompany them with chutneys or yogurt for an extra burst of flavor. Enjoy this dish with your family and friends!
