Ingredients -

For the paste:

  • Cashews (soaked for 30 minutes) – 1/4 cup
  • Fried onions – 2
  • Curd – ½ cup

For cooking:

  • Oil – 2 tablespoons
  • Cumin seeds – ¼ teaspoon
  • Cloves – 3
  • Cinnamon – small piece
  • Black cardamom – 1
  • Green cardamom – 1
  • Black peppercorns – 5-6
  • Turmeric powder – ½ teaspoon
  • Kashmiri red chili powder – 1 teaspoon
  • Dried fenugreek leaves (kasuri methi) – ½ teaspoon
  • Garam masala – ½ teaspoon
  • Paneer (cut into pieces) – 1 cup
  • Hot water – 1 cup
  • Salt – to taste
  • Green chili (sliced) – 1
  • Fresh coriander leaves (chopped) – as needed

Method –

  1. Firstly. take a blender jar and add ¼ cup soaked cashews, 2 fried onions, and ½ cup yogurt. Blend everything into a smooth paste. This rich and creamy paste will enhance the taste of the gravy.

  2. Now heat 2 tablespoons of oil in a pan. Add ¼ teaspoon cumin seeds, 3 cloves, a small piece of cinnamon, 1 black cardamom, 1 green cardamom, and 5-6 black peppercorns. Sauté them until aromatic.

  3. Now, add the prepared cashew-onion-yogurt paste to the pan and mix well. Then, add ½ teaspoon turmeric powder and 1 teaspoon Kashmiri red chili powder.
  4. Cook this mixture until oil starts to separate from the gravy. Cover the pan and let it simmer on low heat for 10 minutes. 
  5. After 10 minutes, lets check the gravy—it will have a rich and creamy texture with a slight tanginess from the yogurt and deep flavors from the fried onions.
  6. Now, add ½ teaspoon dried fenugreek leaves (Kasuri Methi) and ½ teaspoon garam masala.

  7. Then, add 1 cup of paneer cubes and ½ cup of hot water. Season with salt as per taste and mix gently. Cover the pan and let it cook for 5-7 minutes so the paneer absorbs all the flavors.
  8. Finally, garnish the paneer korma with 1 slit green chili and finely chopped coriander leaves.
  9. Serve hot with naan, roti, or rice and enjoy the rich, restaurant-style taste at home!

Tips 

✔️ If the gravy is too thick, add a little more hot water to adjust the consistency.
✔️ For an extra creamy texture, you can add 2 tablespoons of fresh cream at the end.
