Quick Indian style desi twist macaroni recipe

Who doesn’t love macaroni? It’s one of those dishes that can be whipped up quickly and loved by everyone, especially when you give it a desi twist! In this version of macaroni, we skip the extra step of boiling it separately, making it a one pot wonder. Packed with vegetables, cheese and flavorful spices, this Desi Macaroni recipe is the perfect comfort food when you’re short on time but still crave something tasty and satisfying.  

Ingredients

  • Marconi                 – ½ cup
  • Chopped vegetables (carrot, tomatoes, peas, bell peppers)  – 1 cup
  • Oil                 – 1 tbsp
  • Cumin seeds – ¼ tsp
  • Chopped ginger & green chili – 1 tsp
  • Tomato ketchup – 1 tsp
  • Mayonnaise – ½ tsp
  • Turmeric powder – ¼ tsp
  • Red chili powder – ½ tsp
  • Coriander powder – ½ tsp
  • Salt – as per taste
  • Water – 1 cup
  • Pasta masala – 1 tsp
  • Processed cheese – 1 cube
  • Fresh coriander leaves – 1 tsp

Method

  1. Start by heating 1 tablespoon of oil in a pan. Add 1/4 tsp of cumin seeds and let them splutter. Once they crackle, add 1 tsp of chopped ginger and green  chili.
  2. Now add chopped mix vegetables like carrots, tomatoes, peas and bell peppers. Saute them on medium heat for about 4 – 5 minutes, until they soften slightly. 
  3. Now add 1 tsp of tomato ketchup and 1/2 tsp of mayonnaise for a creaminess. Next sprinkle in 1/4 tsp of turmeric powder, 1/2 tsp of red chili powder and 1/2 tsp of coriander powder. Stir well to coat the vegetables evenly with all the spices.  
  4. Now add 1/2 cup of macaroni directly to the pan along with the veggies and spices. Season with salt as per your taste and mix everything together. 
  5.  Pour in 1 cup of water. Stir the mixture well, cover the pan with a lid, and let it cook for 9 – 10 minutes until the macaroni’s it fully cooked and has absorbed the flavors. 
  6. Once the macaroni’s is cooked well, sprinkle 1 tsp of pasta masala for an extra burst of flavor. Add 1 cube of processed cheese and stir until it melts and coats the macaroni evenly. 
  7. Finally, garnish the macaroni with 1 tsp of freshly chopped coriander leaves for a fresh and vibrant finish. Our Desi Macaroni is now ready to be serve! 
This recipe is easy to prepare and the ingredients are readily available in most kitchens. Tips 

  • Feel free to add or skip any vegetables according to your preferences. You can also add sweet corns, mushrooms. 
  • Adjust the chili powder according to your spice tolerance. If you want it less spicy, reduce the amount of red chili powder or use Kashmiri red chili powder for a milder flavor. 
  • If you love extra cheesy dishes, feel free to add more cheese or even use a blend of mozzarella and processed cheese for a creamier texture.
