Today we are preparing a dessert that beautifully blends ancient wisdom with modern wellness – A Sugar free Siaphal, Rajgira & Makhana Kheer

Whether you’re observing a vrat (fast), managing  your diet, pr simply in the mood for a wholesome sweet dish, this recipe is a perfect fit.

Let’s talk about the stars of this dish – 

  • Sitaphal (Custard Apple) – a naturally sweet and creamy fruit, rich in antioxidants, vitamins, and fiber. It not only adds natural sweetness but also a luxurious texture to our kheer.
  • Rajgira (Amaranth) – a powerhouse of nutrition and a vrat-friendly grain. It’s gluten-free, high in protein, and brings a lovely earthiness to the dish.
  • Makhana (Fox Nuts) – light, crunchy, and full of calcium and good fats. They soak up the milk beautifully and add an interesting bite to every spoonful.

Together, these ingredients simmer in rich, full-cream milk, enhanced with a touch of cardamom and garnished with crunchy nuts, to create a dessert that is both festive and healthy.

Ingredients

  • Milk – 500 ml
  • Ripe Custard apple / sitaphal – 1
  • Rajgira – ½ cup
  • Makhana – ½ cup
  • Chopped cashews & almonds – 1 tbsp
  • Cardamom powder – 1/8 tsp

Method

  1. Firstly, take a heavy – bottomed pan and pour in 500 ml of full fat milk. Let it come to a nice boil on medium flame.
  2. Once it starts bubbling, turn the heat down to low.
  3. Now, add ½ cup of rajgira (amaranth) – this little supergrain is packed with nutrition and perfect for fasting or healthy diets.
  4. Next add 1/2 cup of makhana (fox nuts). Let it all cook together, slowly thickening into a rich, creamy delight.
  5. While that’s happening, take one fully ripe custard apple (sitaphal). Scoop out the flesh and carefully remove all the seeds. We’ll be using just the smooth pulp.
  6. Now, once your kheer has thickened nicely, it’s time to add some royal touches: A tablespoon of chopped cashews and almonds, And a pinch of cardamom powder for that irresistible aroma.

  7.  now, the magic ingredient – our custard apple pulp. Add about ½ cup of it to the kheer and mix well. 

  8. No need for sugar – the natural sweetness of sitaphal is more than enough!

  9. Turn off the heat, and there you have it – your super healthy, super tasty, sugar-free Sitaphal Kheer is ready to serve!
