Cajun potato recipe

This dish is a favorite in many barbeque – style restaurants and is known for its crunchy texture and creamy, mildly spicy Cajun sauce. The combination of perfectly fried baby potatoes topped with a rich and tangy sauce makes this a crowd- pleaser  for any occasion. Whether you’re hosting a get together or just want to treat yourself to something special, these recipe is quick and easy to make at home. With just a few ingredients, you can recreate this restaurant style Cajun Potato starter in your own kitchen!

Ingredient

  • Baby potato – 12 
  • All purpose flour – 1/2 cup
  • Corn starch – 1/2 cup
  • Red chili powder – 1/4 tsp
  • Black pepper powder – 1/8 tsp
  • Salt – as per taste
  • Water – as required  
  • Mayonnaise – 1/2 cup
  • Mixed herbs – 1 tsp
  • Garlic powder – 1/4 tsp
  • Black pepper powder – 1/8 tsp
  • Kashmiri red chili powder – 1 tsp
  • Milk  – 1/3 cup
  • Oil – to shallow fry 

Method

Step 1 – Boil the potatoes :

  1. Firstly, wash 12 baby potatoes thoroughly. 
  2. Place them in a pressure cooker with enough water to cover the potatoes. Close the lid and cook until you get 2 whistles. Once done, turn off the flame and let the pressure release naturally, Drain the water and allow the potatoes to cool.

Step 2 – Prepare the batter :

  1. Now, take a bowl, mix 1/2 cup all purpose flour and 1/2 cup corn starch 
  2. Add 1/4 tsp red chili powder, 1/8 tsp black pepper powder and add salt as per taste 
  3. Gradually add water to the dry mixture and whisk to form a smooth, medium thick slurry. Make sure the batter is free of lumps. Set aside.

Step 3 – Make the Cajun Sauce :  

  1.  Now prepare cajun sauce, so take another bowl. Combine 1/2 cup mayonnaise, 1 tsp mixed herbs, 1/4 cup tsp garlic powder, 1/8 tsp    tsp black pepper powder and 1 tsp Kashmiri red chili powder.
  2. Slowly add 1/3 cup milk while stirring continuously to achieve a smooth, slightly  thick consistency. 
  3. Mix well and set the cajun sauce aside. 

 

Step 4 – Smash & fry the Potatoes : 

  1. Now gently press each boiled baby potatoes with your hand, a glass or small bowl to  flatten them slightly. Be careful not to break them. 
  2. Dip each pressed potato in the prepared batter, making sure it’s evenly coated. 
  3. Heat oil in a pan for shallow frying. Once the oil is hot, place the batter coated potatoes in the pan.
  4.  Fry on medium heat until both sides turn golden brown and crispy. Remove from the pan and drain on a paper towel. 

Step 5 – Serve the Cajun potatoes : 

  1. Arrange the crispy fried potatoes on a plate. 
  2. Now generously drizzle the Cajun sauce over the potatoes.
  3. You can garnish with finely chopped onions, coriander leaves or even a sprinkle of chaat masala for an extra kick of flavor! 
  4. Enjoy these restaurant style crispy Cajun Potatoes at home with your favorite  drink or as a yummy starter!

Tips – 

  • Make sure the tomatoes are not over boiled to maintain their shape while pressing and frying.
  • Adjust the quantity of red chili powder in the sauce according to your spice preference.   
  • Cajun Potatoes are best served immediately after frying to enjoy their crispiness.
