Ingredient
- Baby potato – 12
- All purpose flour – 1/2 cup
- Corn starch – 1/2 cup
- Red chili powder – 1/4 tsp
- Black pepper powder – 1/8 tsp
- Salt – as per taste
- Water – as required
- Mayonnaise – 1/2 cup
- Mixed herbs – 1 tsp
- Garlic powder – 1/4 tsp
- Black pepper powder – 1/8 tsp
- Kashmiri red chili powder – 1 tsp
- Milk – 1/3 cup
- Oil – to shallow fry
Method
Step 1 – Boil the potatoes :
- Firstly, wash 12 baby potatoes thoroughly.
- Place them in a pressure cooker with enough water to cover the potatoes. Close the lid and cook until you get 2 whistles. Once done, turn off the flame and let the pressure release naturally, Drain the water and allow the potatoes to cool.
Step 2 – Prepare the batter :
- Now, take a bowl, mix 1/2 cup all purpose flour and 1/2 cup corn starch
- Add 1/4 tsp red chili powder, 1/8 tsp black pepper powder and add salt as per taste
- Gradually add water to the dry mixture and whisk to form a smooth, medium thick slurry. Make sure the batter is free of lumps. Set aside.
Step 3 – Make the Cajun Sauce :
- Now prepare cajun sauce, so take another bowl. Combine 1/2 cup mayonnaise, 1 tsp mixed herbs, 1/4 cup tsp garlic powder, 1/8 tsp tsp black pepper powder and 1 tsp Kashmiri red chili powder.
- Slowly add 1/3 cup milk while stirring continuously to achieve a smooth, slightly thick consistency.
- Mix well and set the cajun sauce aside.
Step 4 – Smash & fry the Potatoes :
- Now gently press each boiled baby potatoes with your hand, a glass or small bowl to flatten them slightly. Be careful not to break them.
- Dip each pressed potato in the prepared batter, making sure it’s evenly coated.
- Heat oil in a pan for shallow frying. Once the oil is hot, place the batter coated potatoes in the pan.
- Fry on medium heat until both sides turn golden brown and crispy. Remove from the pan and drain on a paper towel.
Step 5 – Serve the Cajun potatoes :
- Arrange the crispy fried potatoes on a plate.
- Now generously drizzle the Cajun sauce over the potatoes.
- You can garnish with finely chopped onions, coriander leaves or even a sprinkle of chaat masala for an extra kick of flavor!
- Enjoy these restaurant style crispy Cajun Potatoes at home with your favorite drink or as a yummy starter!
Tips –
- Make sure the tomatoes are not over boiled to maintain their shape while pressing and frying.
- Adjust the quantity of red chili powder in the sauce according to your spice preference.
