I’ve always loved recipes that celebrate the richness of natural ingredients, and this pudding does exactly that. Made with homemade almond milk, soaked chia and basil seeds, and topped with fresh fruits like mango and banana, it’s not only easy to make but also a treat for your body and soul. Whether you’re managing a condition like PCOS or simply trying to make cleaner food choices, this chia pudding is light on the stomach and rich in nourishment.

What I truly love about this recipe is how versatile and customizable it is. You can prepare it ahead of time and let it set overnight — perfect for busy mornings or when you want a chilled sweet treat without the guilt.

Ingredients

  • Soaked almonds – 10 (peeled)
  • Water – as needed (to grind almonds)
  • Chia seeds – 1 tbsp
  • Basil seeds (sabja) – 1 tbsp
  • Chopped dates – 2
  • Black raisins – 6–7
  • Cardamom powder – a pinch (or cinnamon powder)
  • Honey – 1 tbsp
  • Chopped mango pieces – as required
  • Banana slices – as required
  • Roasted mixed seeds – 2 tsp
    (Pumpkin, Flax, Sesame, Melon, Sunflower seeds)

Method

  1. Firstly take 10 almonds and soak them in water for 5–6 hours or overnight.
  2. After soaking, discard the water and gently peel off the almond skins. 
  3. Transfer the peeled almonds into a blender jar. Add a little water and blend to form a smooth paste.
  4. Add a bit more water to the paste and blend again until you get smooth, fresh almond milk.

  5. In a container, add the almond milk. Then add chia seeds – 1 tbsp, basil seeds – 1 tbsp, chopped dated – 2, 6–7 black raisins, a pinch of cardamom or cinnamon powder. Mix it well. 
  6. Close the container and place it in the refrigerator overnight so the seeds swell and the flavors blend. 
  7. Next day.. take it out of the fridge and add 1 tbsp honey. Mix well.
  8. In a serving bowl, add half the pudding mixture first, layer with chopped mango pieces and a sprinkle of roasted mixed seeds, add the remaining pudding on top.
  9. Finally, garnish with more mango pieces, banana slices, soaked raisins, and roasted seeds.
  10. This pudding stays fresh in the fridge for up to 3 days. Store in an airtight container and add fruits right before serving to keep them fresh.

Tips:

  • Feel free to use other fruits like kiwi or strawberries.
  • You can substitute almond milk with coconut milk if you prefer.
  • This is a great option for fasting, healthy snacking, or as a satisfying breakfast!
