Wash the bajra,rice, urad dal, and fenugreek seeds thoroughly 2–3 times until the waterruns clear.
Add enough fresh water and soak everything together for 5–6 hours
Drain thesoaked ingredients completely.
Grind thebajra, rice, urad dal, and fenugreek seeds into a smooth batter, adding chilledwater little by little as needed.
Transfer thebatter to a large bowl and mix well until smooth. Do not add salt atthis stage.
Cover the bowland allow the batter to ferment in a warm place for 8–10 hours orovernight.
Once fermented,the batter will become airy, fluffy, and slightly increased in volume.
Add salt totaste and gently mix the batter without over-stirring.
Grease the idlimoulds lightly with oil.
Pour the batterinto each mould, filling them about three-fourths full.
Place the idlistand inside a preheated steamer and steam for 10–12 minutes.
Remove the idlistand carefully and allow it to rest for 2 minutes.
Gently removethe idlis using a spoon or butter knife.
Serve hot with coconutchutney, tomato chutney, peanut chutney, or sambar.
