Tomato Salsa

Creamy Lettuce Salad

Instructions
Prepare the stir fried veggies
Firstly, heat oil and butter in a pan over high heat. Add green chili and mushrooms and stir-fry for 2 minutes.
Next add the mixed vegetables, mixed herbs, red chili flakes, and salt. Stir-fryfor about 5 minutes.
Then season with mixed herbs - 1/2 tsp , chili flakes -1 tsp , and salt as per taste.
Cook on high flame for 5 minutes, then add tomato puree - 1/4 cup. Mix it well.
Again cover and cook for 5–7 minutes until veggies are slightly soft but still crunchy.
After 5 minutes, remove lid. Mix it well. Stir-fried veggies are ready.
Prepare the rajma masala
In same pan, heat oil and butter - 1 tsp (each), add chopped green chili - 1 and tomato puree - 1/2 cup.
Sautéit for 2 - 3 minutes.
Then add turmeric powder - 1/8 tsp, red chili - 1/4 tsp, coriander powder - 1/4 tsp, cumin powder - 1/4 tsp, mixed herbs - 1/2 tsp and salt as per taste.
Mix well and let it simmer until the masala thickens.
Next add boiled rajma - 1/2 cup and mix it well. And simmer it for 5 - 7 minutes in low flame.
Now remove lid, mash a few rajma for a creamy texture. Finally garnish with chopped coriander leaves and mix it well
Tangy & creamy rajma is ready.
Prepare the sweet corns
Heat butter in the pan. Add boiled sweet corn, red chili flakes, and salt
Stir-fry for about 2 minutes until the corn is warm and well coated with the buttery seasoning. Set aside.
Prepare the Herbed Coriander Rice
Heat oil and butter in a pan. Add cooked rice, mixed herbs, salt, and fresh coriander.
Toss over high heat for 2–3 minutes. Add a squeeze of lemon juice if desired.
Prepare the Paneer Toast
Firstly, heat oil and butter in a pan. Place the paneer slices in the pan.
Sprinkle with red chili flakes and salt. Toast on both sides until golden brown.
Garnish with fresh coriander.
Vegan option: Replace paneer with firm tofu and butter withoil or vegan butter.
Prepare the Tomato Salsa
Add chopped tomatoes, cucumber, mixed bell peppers, and fresh coriander to abowl.
Add lemon juice and salt. Mix well and refrigerate until serving.
Prepare the lettuce salad
Whisk together hung curd, black pepper, and salt.
Add shredded lettuce and gently mix until coated
Assemble the Burrito bowl
Lets assemble the burrito bowl. Add a generous serving of herbed coriander rice to a large bowl.
Arrange the stir-fried vegetables,rajma masala, sweet corn, and creamy lettuce salad around the rice.
then add a scoop of chilled tomato salsa.
Place the golden paneer toastin the center or on top.
Garnish with fresh coriander and lemon wedges.

Notes
Keep the vegetables slightly crunchy for the best texture.
Prepare the salsa and lettuce salad just before serving for maximum freshness.
You can use brown rice instead of white rice.
Canned rajma can be used; drain and rinse before cooking.
Add avocado, jalapeños, tortilla chips, cheese, or guacamole for extra toppings.
For a vegan version, use tofu instead of paneer and plant-based yogurt instead of hung curd.
