Seviyan Kheer | Vermicelli Dessert | Payasam

Today, we are preparing a classic Indian dessert, Sevai Kheer. This creamy and delicious vermicelli pudding is a favorite during festive occasions and special gatherings. Simple to make yet incredibly satisfying, Sevai Kheer is a perfect way to end any meal on a sweet note.

Ingredients
  

  • 1 cup Roasted thick Sevai / vermicelli
  • 4 cup Milk
  • 1/2 cup Sugar
  • 2 tbsp Ghee
  • 1/4 cup chopped nuts (almonds, cashews, pistachios, Chironji,)
  • 2 tbsp Raisins
  • 1/2 tsp Cardamom powder
  • 1/8 tsp Saffron strands (optional)

Instructions
 

  • 1) Firstly boil the milk and keep it aside.
    2) Heat the ghee in a pan. Add chopped cashews, almond, pistachios and raisin. Fry until they are golden color. Take it out in a plate.
    3) Now add the sevai and roast it on medium heat until it turns golden brown. Stir continuously to prevent burning.
    4) Now pour warm milk into it. Cook on low heat until the sevai is soft and cooked through, stirring occasionally to prevent sticking. It takes 8 - 9 minutes
    5) Now add saffron (optional), almond slices, chironji and mix well
    6) When sevai becomes soft, then lastly add sugar. Mix well until it dissolves.
    7) Lastly add cardamom powder, fried nuts in to it. Let the kheer simmer for a few more minutes to allow all the flavors to meld together.
    8) Now turn off the flame. Serve the Sevai Kheer warm or chilled, garnished with a few more nuts and saffron strands for an extra touch of elegance.
