Instead of spending too much time wondering what to cook, you can turn to this simple soya pulao. It requires very few ingredients, yet the combination of spices, herbs, curd marinated soya chunks, and fragrant basmati rice creates a dish that is packed with flavor.

The secret to making this pulao especially delicious is marinating the soya chunks in curd and spices before cooking. The soya chunks absorb the tanginess of the curd along with the flavors of chilli, turmeric, and coriander powder, making every bite flavorful. When cooked together with the aromatic onion tomato masala and whole spices, the soya chunks become wonderfully soft and delicious.

I also like adding a little mint and fresh coriander to this pulao. Mint gives it a lovely freshness and adds a subtle biryani like aroma, while coriander brings everything together. Whole spices such as bay leaf, cinnamon, cloves, cardamom, cumin, and star anise are sautéed in ghee at the beginning, allowing their wonderful aroma to infuse into the entire dish.

Another great thing about this recipe is that it is made in a pressure cooker, so you don’t need to spend a long time standing in the kitchen. Once the masala is ready, simply add the marinated soya chunks, soaked basmati rice, and hot water, then pressure cook everything for just one whistle. The rice continues to cook in the residual steam as the pressure naturally releases, resulting in beautifully cooked and aromatic pulao.

Soya chunks are also known for being a good source of plant based protein, making this pulao a satisfying option for vegetarians. It can be enjoyed as a wholesome lunch or dinner and is perfect for those days when you want something flavorful without preparing an elaborate meal.

For the Soya Marinade

  • 1 cup soya vadi (soya chunks)
  • ½ cup whisked curd (yogurt)
  • 1 tbsp red chilli powder
  • ½ tsp turmeric powder
  • 1 tsp coriander powder

For the Pulao

  • 1½ cups basmati rice
  • 1 onion, thinly sliced
  • 1 tomato, finely pureed
  • 1 tbsp ginger-garlic paste
  • 1 green chilli, chopped
  • 3 tbsp ghee (or oil)
  • 1 tsp red chilli powder
  • 1 tsp garam masala powder
  • Salt to taste
  • 1 tbsp finely chopped coriander leaves
  • 1 tbsp mint leaves
  • 2 cups hot water

Whole Spices

  • 1 tsp cumin seeds
  • 1 bay leaf
  • 1 small piece of cinnamon
  • 3 cloves
  • 3 green cardamom pods
  • 1 star anise

Optional

  • 5–6 cashews

Method

Step 1 - Prepare the Soya Chunks

  1. Take 1 cup of soya vadi in a bowl. Add about 2 cups of hot water and let the soya chunks soak for 10–15 minutes.
  2. After 15 minutes, drain the water completely. Squeeze the soya chunks well to remove any excess water. You’ll notice that they have softened and increased in size.
  3. Now add ½ cup whisked curd, 1 tbsp red chilli powder, ½ tsp turmeric powder, and 1 tsp coriander powder.
  4. Mix everything well so that the curd and spices coat the soya chunks evenly. The tanginess of the curd and the spices will be absorbed beautifully into the soya.
  5. Let the soya chunks marinate for 15–20 minutes.

Step 2 - Soak the Rice

  1. Meanwhile, wash 1½ cups of basmati rice thoroughly and soak it in water for about 15 minutes. Drain the rice and keep it aside.

Step 3 - Prepare the Pulao Masala

  1. We’ll be making this pulao in a pressure cooker.
  2. Heat 3 tbsp ghee in the pressure cooker. You can use oil instead if you prefer.
  3. Once the ghee is hot, add the whole spices — 1 bay leaf, 1 piece of cinnamon, 3 cloves, 3 green cardamom pods, 1 star anise, and 1 tsp cumin seeds.
  4. Fry the spices for a few seconds until they become fragrant. This helps release their flavors into the ghee.
  5. Now add 1 thinly sliced onion and sauté until it becomes soft and lightly golden.
  6. Add 1 tbsp ginger-garlic paste and 1 chopped green chilli. Sauté well until the raw aroma of the ginger and garlic disappears.
  7. At this stage, you can also add 5–6 cashews. This is completely optional.
  8. Add 1 tsp red chilli powder and mix well.

Step 4 - Cook the masala

  1. Add the finely pureed tomato and cook everything together until the masala is well roasted and the oil or ghee begins to separate from it.
  2. The onion-tomato masala is now beautifully cooked and aromatic.
  3. Add the marinated soya chunks and mix everything well.
  4. Keep the flame on medium and cook the soya in the masala for about 4–5 minutes, stirring occasionally so that the flavors coat the soya evenly.
  5. Now add 1 tsp garam masala powder, Salt to taste, Finely chopped coriander leaves, A few mint leaves.
  6. The mint adds a lovely biryani-style aroma and flavor to the pulao.
  7. Mix everything well and allow the spices to coat the soya chunks

Step 5 - Add the rice

  1. Add the soaked and drained basmati rice to the cooker.
  2. Mix gently with a spoon or spatula so that the rice doesn’t break.
  3. Now add 2 cups of hot water and stir gently.

Step 6 - Pressure Cook

  1. Close the pressure cooker lid and cook for one whistle on medium heat.
  2. Once the first whistle comes, turn off the heat and let the pressure release naturally. Keep the cooker undisturbed for a few minutes so the pulao can continue cooking in its own steam.
  3. Once the pressure has released, carefully open the cooker.
  4. Gently fluff the pulao and garnish with some freshly chopped coriander leaves.
  5. And there you have it a wonderfully fragrant and delicious Soya Pulao, ready in very little time!

Instructions
 

Prepare the soya chunks

  • Firslty, add the soya chunks to a bowl and pour in about 2 cups of hot water. Let them soak for 10–15 minutes.
  • Drain the water completely and squeeze the soya chunks well to remove excess water.
  • Add whisked curd, red chilli powder, turmeric powder, and coriander powder.
  • Mix well until the soya chunks are evenly coated with the marinade.
  • Let the soya chunks marinate for 15–20 minutes.

Prepare the rice

  • Wash the basmati rice thoroughly and soak it in water for about 15 minutes.
  • Drain the rice completely and keep it aside.

Prepare the masala

  • Heat ghee in a pressure cooker over medium heat.
  • Add cumin seeds, bay leaf, cinnamon, cloves, green cardamom, and star anise.
  • Sauté the whole spices for a few seconds until fragrant.
  • Add the sliced onion and sauté until soft and lightly golden.
  • Add ginger-garlic paste and chopped green chilli. Sauté until the raw aroma disappears.
  • Add the cashews, if using, and lightly fry them.
  • Add red chilli powder and mix well.
  • Add the finely pureed tomato and cook until the masala is well cooked and the ghee begins to separate.

Add the soya chunks

  • Add the marinated soya chunks to the masala.
  • Mix well and cook over medium heat for 4–5 minutes, allowing the masala to coat the soya chunks.
  • Add garam masala, salt, chopped coriander leaves, and mint leaves.
  • Mix everything well.

Add the rice and cook

  • Add the soaked and drained basmati rice.
  • Gently mix the rice with the masala, taking care not to break the grains.
  • Add 2 cups of hot water and stir gently.
  • Close the pressure cooker with the lid.
  • Cook over medium heat for one whistle.
  • Turn off the heat and allow the pressure to release naturally.
  • Carefully open the cooker and gently fluff the pulao.
  • Garnish with freshly chopped coriander leaves.
  • Serve hot Soya Pulao with boondi raita, cucumber raita, plainyogurt, or a fresh salad.
