  • 2 tablespoons grated bottle gourd (lauki)
  • 2 tablespoons finely chopped tomato
  • 2 tablespoons grated pumpkin
  • 2 tablespoons grated carrot
  • 2 tablespoons finely chopped capsicum
  • 3 green chillies, finely chopped
  • ½ teaspoon grated ginger
  • 1 sprig curry leaves, finely chopped
  • 2 tablespoons fresh coriander leaves, finely chopped
  • ½ teaspoon cumin seeds
  • ½ teaspoon red chilli flakes
  • ⅛ teaspoon black pepper powder
  • Salt, to taste
  • 1 small sachet ENO
  • Water, as needed
  • Oil, for cooking

For the Peanut Chana Chutney

  • ½ cup roasted peanuts
  • ¼ cup roasted chana (roasted gram)
  • 1 green chilli
  • 1 small piece ginger
  • ¼ teaspoon cumin seeds
  • ½ teaspoon tamarind
  • ¼ teaspoon jaggery
  • Salt, to taste
  • Water, as needed

For Tempering

  • 1 tablespoon oil
  • ¼ teaspoon mustard seeds
  • ¼ teaspoon cumin seeds
  • ⅛ teaspoon hing (asafoetida)
  • 2 dried red chillies
  • 1 sprig curry leaves
  • ¼ teaspoon sesame seeds
Peanut Chana Chutney

Method

Step 1 - Prepare the Batter

  1. Firstly, add 1 cup rice flour, 1 cup boiled and mashed potato, and 2 tablespoons curd to a blender.Add approximately 1 cup of water and blend until smooth and creamy.
  2. If needed, add a little more water while blending to get a smooth batter without lumps.
  3. Transfer the batter to a large mixing bowl.

Step 2 - Add the Vegetables

  1. Now add the grated bottle gourd, chopped tomato, grated pumpkin, grated carrot, and chopped capsicum.
  2. Then add the finely chopped green chillies, grated ginger, chopped curry leaves, and fresh coriander leaves.
  3. Next, add cumin seeds, red chilli flakes, black pepper powder, and salt.
  4. Mix everything well until the vegetables are evenly distributed throughout the batter.

Step 3 - Rest the Batter

  1. Cover the bowl and let the batter rest for 10–15 minutes.
  2. This short resting time allows the rice flour to absorb the liquid and gives the batter a better consistency.

Step 4 - Add ENO

  1. After 10–15 minutes, add 1 small sachet of ENO to the batter.
  2. Gently mix until it is evenly incorporated.
  3. Do not overmix the batter after adding ENO.

Note: You can use baking powder instead of ENO if preferred.

Step 5 - Cook the Pancakes

  1. Heat a small non-stick or heavy-bottomed pan over low to medium heat.
  2. Add a little oil and spread it lightly over the pan.
  3. Take around 2 tablespoons of batter and pour it into the centre of the pan.
  4. Gently spread it into a small, slightly thick pancake. Cover the pan with a lid and cook on low heat for about 1 minute

Step 6 - Flip and Cook

  1. Remove the lid and drizzle a little oil around the edges and over the pancake.
  2. Carefully flip the pancake with a spatula.
  3. Cook the other side until golden and completely cooked through.
  4. The boiled potato gives the pancakes a beautiful golden colour and slightly crisp exterior.
  5. Remove the cooked pancake from the pan.
  6. Repeat the same process with the remaining batter.

Prepare Peanut Chana Chutney

  1. Add the roasted peanuts, roasted chana, green chilli, ginger, cumin seeds, tamarind, jaggery, and salt to a blender.
  2. Add a little water and blend until smooth or slightly coarse, depending on your preference.
  3. Transfer the chutney to a serving bowl.
  4. Then heat 1 tablespoon of oil in a small pan. Add mustard seeds and let them crackle. Add cumin seeds, hing, dried red chillies, curry leaves, and sesame seeds. Sauté for a few seconds until aromatic.

  5. Pour the tempering over the chutney and mix well.

  6. Our peanut chana chutney is ready! Serve the warm vegetable pancakes with the chutney.

  • Add a little more water if required and blend again to make a smooth batter without lumps.
  • Transfer the batter to a large mixing bowl.
  • Add the grated bottle gourd, chopped tomato, grated pumpkin, grated carrot and chopped capsicum.
  • Add finely chopped green chillies, grated ginger, chopped curry leaves and fresh coriander.
  • Add cumin seeds, red chilli flakes, black pepper powder and salt.

  • Cover the pan with a lid and cook on low heat for about 1 minute.
  • Remove the lid and drizzle a little oil around the edges and on top.
  • Carefully flip the pancake and cook the other side until golden and cooked through.
  • Once both sides are nicely cooked, remove the pancake from the pan.
  • Repeat with the remaining batter.

  • Add roasted peanuts, roasted chana, green chilli, ginger, cumin seeds, tamarind, jaggery and salt to a blender.
  • Add a little water and blend into a smooth or slightly coarse chutney.
  • Transfer the chutney to a bowl.

Prepare the Tempering

  • Heat 1 tablespoon oil in a small pan.
  • Add mustard seeds and let them crackle.
  • Add cumin seeds, hing, dried red chillies, curry leaves and sesame seeds.
  • Sauté for a few seconds until aromatic.
  • Pour the tempering over the chutney and mix.
  • Serve immediately with the warm rice flour vegetable pancakes.
