Ingredients -
• Alsi (Flax seeds) – 200 gm / 1 cup
• Wheat flour – 200 gm / 1 cup
• Clarified Butter / Ghee – 200 gm / 1 cup
• Jaggery or sugar – 300 gm / 1 & ½ cup
• Cashews & Almonds – 100 gm / ½ cup
• Dry Dates – 50 gm
• Pistachios – 20 gm
• Edible gum – 20 gm
• Cardamom – 5-6 (peel and grind)
• Raisins – 2 tbsp
Method –
Roast Flaxseeds:
In a dry pan, roast the flaxseeds on medium flame until they make a twisting sound. Once roasted, transfer them to a plate and let them cool slightly.Roast Dry Fruits:
In the same pan, lightly roast the cashews, almonds, and pistachios. Once done, transfer them to a separate bowl.Grind Flaxseeds:
In a mixer, grind the roasted flaxseeds, being careful not to over-grind them. Set aside.Grind Dry Fruits and Dates:
Grind the roasted dry fruits and dried dates separately until they are finely chopped.Fry Edible Gum:
In a pan, heat 3 tbsp of ghee and fry the edible gum on low flame. It will rise as it cooks. Fry until it turns brown, then remove it to a separate plate. Allow it to cool completely, then crush it slightly.Roast Flaxseed Powder:
In the leftover ghee, roast the ground flaxseed powder over medium or low flame for about 5-6 minutes, then transfer it to a bowl.Combine Ingredients:
Add the ground cashews, almonds, pistachios, date powder, and raisins to the flaxseed powder. Mix well and set aside.Roast Wheat Flour:
In another pan, heat 5-6 tbsp of ghee. Add the wheat flour and roast it until it turns brown and fragrant. Transfer to the same plate and let it cool slightly.Add Cardamom Powder:
Mix in the cardamom powder with the roasted flour.Prepare Jaggery Syrup:
Add the leftover ghee and grated jaggery to the pan. Stir in 2 tbsp of water and cook until the mixture reaches a one-thread consistency. Once ready, turn off the flame.Combine Mixture:
Add the flaxseed mixture to the jaggery syrup and mix well.Shape into Ladoos:
Allow the mixture to cool slightly. Once manageable, start shaping it into ladoos.Store:
Your Alsi Ladoo (Flaxseed Ladoo) is ready! Store them in an airtight container where they can last for over a month.
