  • Fine Semolina (Rava): 1 ½ cups (150 gm)
  • Powdered Sugar: 1 ½ cups (300 gm)
  • Ghee: ¾ cup (150 gm)
  • Cardamom Powder: ¼ tsp
  • Sliced Almonds & Pistachios: 1 tbsp
  • Turmeric Water: ½ tsp (for color) 

Method

Step 1 - Prepare the ingredients

  1. Before you begin, measure the besan, fine rava, powdered sugar, ghee, cardamom powder, and nuts. Keep everything ready because the roasting process requires regular stirring. Make sure the powdered sugar is fine and lump-free.

Step 2 - Heat the kadai and add the ghee

  1. Place a heavy-bottomed kadai or deep pan over low heat.
  2. Add about 80% of the ghee, keeping the remaining ghee aside to add later. Allow the ghee to melt completely, but do not let it become too hot or smoky.

Step 3 - Add the besan and rava:

  1. Once the ghee has melted, add the 1½ cups of besan and 1½ cups of fine rava to the pan.
  2. Mix everything thoroughly so that the ghee coats the flour and semolina evenly.
  3. Roast the besan and rava over low heat, stirring continuously with a spatula.
  4. Make sure to scrape the bottom and sides of the kadai as you stir so that nothing sticks or burns.
  5. At first, the mixture may look slightly dry and crumbly, but as the ghee warms and the ingredients roast, it will become smoother and more fragrant.
  6. Continue roasting for approximately 20 minutes on low heat. Do not increase the heat to speed up the process. The besan and rava need time to cook properly and develop their characteristic nutty flavor.
  7. You will notice the mixture gradually changing from a pale color to a light golden shade, and the raw smell of besan will disappear.

Step 4 - Add the nuts

  1. Once the mixture is lightly golden and aromatic, add the sliced almonds and pistachios. Stir well so the nuts are evenly distributed throughout the mixture.
  2. Now pour in the remaining ghee and mix thoroughly. Continue roasting for another 10–15 minutes over low heat, stirring frequently. The mixture should gradually become deeper golden in color and smell rich, nutty, and fragrant.
  3. This is an important stage. The mixture should no longer have a raw flour smell. It should look glossy from the ghee and have a rich golden color.
  4. If you rub a small amount between your fingers after allowing it to cool slightly, it should feel well roasted rather than gritty or raw.
  5. Avoid over-roasting, as this can make the ladoos taste bitter.
  6. Once the mixture is properly roasted, add ½ teaspoon of turmeric water. Stir immediately and mix well so the color is evenly distributed.
  7. The turmeric water will give the ladoo mixture a beautiful golden appearance. This step is optional, so you can skip it if you prefer.
  8. Turn off the heat and transfer the roasted mixture to a wide plate or large bowl.
  9. Spread it out slightly so that it cools more quickly and evenly. Allow it to cool to room temperature before adding the sugar. Do not add the powdered sugar while the mixture is very hot.

Step 5 - Add cardamom and powdered sugar

  1. Once the mixture has cooled, add ¼ teaspoon of cardamom powder and 1½ cups of powdered sugar.
  2. Mix everything thoroughly using a spatula or your hands. Make sure there are no pockets of sugar and that the cardamom is evenly distributed throughout the mixture.
  3. Take a small portion of the mixture and press it firmly between your fingers. It should hold together.
  4. If the mixture feels too dry or crumbly and doesn’t bind, add a small amount of melted ghee, about 1 teaspoon at a time, and mix again. Avoid adding too much ghee at once.

Step 6 - Shape the ladoos

  1. Take a small portion of the mixture while it is still slightly warm. Place it in the palm of your hand and gently press it together.
  2. Roll it between your palms using gentle circular movements until you have a smooth, round ladoo. Repeat with the remaining mixture.
  3. Place the finished ladoos on a plate or tray without stacking them.
  4. Allow them to rest at room temperature until they become firm.
  5. They will hold their shape better as they cool completely.

  • Once the flour mixture starts to lightly brown, add the sliced almonds and pistachios. Pour in the remaining ghee and continue roasting the mixture for another 10-15 minutes, stirring occasionally until the flour turns a golden color and becomes aromatic.
  • At this stage, add ½ tsp of turmeric water to the mixture. Mix well and turn off the heat. Let the mixture cool to room temperature.
  • Once the mixture has cooled, add ¼ tsp of cardamom powder and 1 ½ cups of powdered sugar. Mix everything thoroughly to ensure the sugar is evenly distributed.
  • Take small portions of the mixture and shape them into round ladoos using your hands.
  • Once all the ladoos are formed, let them set. Store the ladoos in an airtight container. They will stay fresh at room temperature for 15-20 days.
