Ingredients
- Peanuts – 1 cup
- Gram flour (besan) – ¼ cup
- Rice flour – ¼ cup
- Red chili powder – 1 tsp
- Turmeric powder – ¼ tsp
- Garam masala powder – ¼ tsp
- Salt – to taste
- Ginger & green chili paste – 1 tsp
- Oil – ½ tsp (for mixing)
- Water – 3–4 tbsp
- Oil – for deep frying
- Chaat masala – ¼ tsp
- Red chili powder – 1/8 tsp (for garnish)
Method
- Firstly take a large bowl, add 1 cup of peanuts 1 cup. Add gram flour 1/4 cup , rice flour 1/4 cup, red chili powder – 1 tsp, turmeric powder – 1/4 tsp, garam masala powder – 1/4 tsp, salt as per taste and ginger and green chili paste.
- Now add 1/2 tsp oil and sprinkle 2 – 3 tbsp of water. Mix everything well using your hands until the peanuts are well coated. The coating should be slightly sticky but not watery — it should just cling to the peanuts evenly.
- In a deep frying pan, heat enough oil over medium flame. To test if it’s ready, drop a small bit of the mixture — if it rises immediately, the oil is perfect for frying.
Gently drop the coated peanuts into the hot oil in small batches. Fry until they turn golden brown and crispy. Keep stirring occasionally for even cooking.
Remove the fried peanuts using a slotted spoon and place them on tissue paper to absorb extra oil. While still warm, sprinkle chaat masala and a pinch of red chili powder for that extra zing.
