Ingredients

For the Dough

  • All-purpose flour (maida) – 1 cup
  • Butter – ¼ tsp
  • Salt – as per taste
  • Water – 1 cup

For the Stuffing

  • Oil – 1 tsp
  • Butter – ½ tsp
  • Green chili – 1 (finely chopped)
  • Ginger – ¼ tsp (grated)
  • Capsicum (green, yellow, red) – ¼ cup (chopped)
  • Grated carrot – 1 tbsp
  • Paneer – 1 cup (grated)
  • Processed cheese – 1 cube (grated)
  • Fresh cream – 1 tbsp
  • Red chili flakes – ¼ tsp
  • Red chili powder – ¼ tsp
  • Black pepper powder – ⅛ tsp
  • Mixed herbs – ¼ tsp
  • Curd – 2 tsp
  • Tomato ketchup – 1 tsp
  • Salt – as per taste

For Coating & Frying

  • All-purpose flour – 2 tbsp
  • Cornflour – 1 tbsp
  • Water – as required
  • Bread crumbs – as needed
  • Oil – for deep frying

Method

Step 1 – Prepare the Stuffing

  • Heat oil and butter in a pan.
  • Add chopped green chili and grated ginger. Sauté for a few seconds.
  • Add chopped capsicum and grated carrot. Cook for 2 minutes.
  • Add grated paneer and sauté for another 2–3 minutes.
  • Now add red chili flakes, red chili powder, black pepper, mixed herbs, salt, curd, and tomato ketchup.
  • Mix well and cook for 2–3 minutes.
  • Finally, add grated processed cheese and fresh cream.
  • Cook until the cheese melts and everything combines well.
  • Turn off the flame and keep the stuffing aside to cool.

Step 2 – Prepare the Dough

  • In a pan, add 1 cup water, salt, and butter. Bring it to a boil.
  • Lower the flame and add maida gradually, mixing continuously to avoid lumps.
  • Mix until it forms a soft dough-like mixture.
  • Turn off the flame and transfer the dough to a bowl.
  • Cover and rest for 15 minutes at room temperature.

Step 3 – Knead and Shape

  • Once slightly cool, knead the dough well.
  • If it sticks, apply a little oil on your hands.
  • Knead until the dough becomes smooth and soft.
  • Divide the dough into equal portions and roll them into balls.
  • Roll each ball into a small circular disc (like a puri).

Step 4 – Fill and Fold

  • Place prepared stuffing in the center of the disc.
  • You can add extra cheese for more taste.
  • Prepare a glue by mixing maida and water.
  • Apply it on the edges of the disc.
  • Fold into a half-moon shape and seal the edges firmly by pressing

Step 5 – Coat the Half-Moon Pies

  • Prepare a thick batter using maida, cornflour, and water.
  • Dip each half-moon pie into the batter.
  • Coat evenly with bread crumbs.

Step 6  – Fry the Pies

  • Heat oil on medium flame.
  • Deep fry the pies until they turn golden brown and crispy.
  • Flip carefully to fry evenly.
  • Remove and place on tissue paper.
