Ingredients
For the Biryani
- Baby potatoes – 200 g (or regular potatoes cut into chunks)
- Basmati rice – 1 cup
For Grinding
- Garlic cloves – 4–5
- Ginger – 1 inch piece
For Frying & Marination
- Onions – 2 medium, thinly sliced
- Green chilies – 4–5, slit
- Fresh mint leaves – 8–10
- Cashews – 10–12
- Curd (yogurt) – 2 tbsp
- Oil – 1 tbsp + 2 tbsp
- Ghee – 2 tsp
Spices
- Turmeric powder – ½ tsp (for potatoes)
- Red chili powder – ½ tsp (for potatoes)
- Turmeric powder – ¼ tsp (for marinade)
- Red chili powder – 1 tsp
- Biryani masala – 2 tsp
- Kasoori methi (dried fenugreek leaves) – 1 tsp
- Garam masala – ½ tsp
- Salt – as per taste
Whole Spices (for rice)
- Bay leaves – 2
- Green cardamom – 2
- Cinnamon – 1 small piece
Method
Step 1: Wash and Soak the Rice
- Take 1 cup basmati rice in a large bowl.
- Wash the rice thoroughly 2–3 times until the water becomes relatively clear.
- Add enough water and soak the rice for 15–20 minutes.
- Soaking helps the rice cook evenly and gives you long, fluffy grains.
Step 2: Prepare the Ginger-Garlic Paste
- Add the garlic cloves and ginger to a small mixer jar.
- Coarsely crush or grind them together.
- You don’t need to make a completely smooth paste. A slightly coarse ginger-garlic mixture adds wonderful texture and flavour to the biryani.
- Set aside.
Step 3: Fry the Onions
- Heat 1 tablespoon oil in a pan over medium heat.
- Add the thinly sliced onions.
- Fry slowly until the onions become light golden brown and caramelized.
- Keep stirring occasionally so they cook evenly and don’t burn.
- Once golden, remove the fried onions from the pan and keep them aside.
- These fried onions will be used both in the potato marinade and for layering the biryani.
Tip: Don’t cook the onions on very high heat. Slowly caramelized onions give the biryani much better flavour.
Step 4: Prepare the Potatoes
- Peel the baby potatoes and wash them well.
- Using a small knife, lightly score or make shallow cuts on the potatoes.
- This allows the spices and yogurt marinade to penetrate into the potatoes.
- If using regular potatoes, cut them into medium-sized chunks.
- Place the potatoes in a bowl.
- Then add ½ tsp turmeric powder, ½ tsp red chilli powder, Cashews, 1 tbsp oil.
- Mix everything well so the potatoes are evenly coated.
Step 5: Stir-Fry the Potatoes
- Heat the same pan used to fry the onions.
- Add a little more oil if required.
- Add the seasoned potatoes and stir-fry for approximately 4–5 minutes.
- Cook until the potatoes develop a light golden colour on the outside.
- They do not need to be completely cooked at this stage because they will finish cooking during the dum process.
- Remove them from the pan and set aside.
Step 6: Marinate the Potatoes
- Take a large mixing bowl.
- Add 2 tablespoons curd/yogurt and whisk until smooth.
- Add:1 tsp kasoori methi, ¼ tsp turmeric powder, 1 tsp red chilli powder, 2 tsp biryani masala, Fried onions, 4–5 slit green chillies, Fresh mint leaves, Salt to taste, ½ tsp garam masala, 1 tsp ghee. Mix everything well.
- Add the stir-fried potatoes and gently toss until every potato is well coated with the marinade.
- Cover and let the potatoes marinate for 15–20 minutes.
- This short marination allows the potatoes to absorb the spices and yogurt.
Step 7: Cook the Basmati Rice
- Take a large pot and bring approximately 4 cups of water to a boil.
- Add 2 bay leaves, 2 green cardamom pods, 1 small cinnamon stick, Salt, ½ tsp ghee, A few fresh mint leaves.
- Drain the soaked rice and add it to the boiling water.
- Cook on medium heat until the rice is approximately 80% cooked.
- The grains should be cooked on the outside but still have a slight bite in the centre.
- Do not cook the rice completely because it will continue cooking during the dum process.
- Immediately drain the rice and set aside.
Important: Overcooked rice can turn the biryani mushy, so this step is very important.
Step 8: Prepare the Potato Masala
- Take a heavy-bottomed pot suitable for dum cooking.
- Heat 2 tablespoons oil.
- Add 1 slit green chilli and approximately 1 tablespoon of the ginger-garlic paste.
- Sauté until fragrant.
- Now add the marinated potatoes along with any remaining marinade from the bowl. Mix gently.
- Add approximately ½ cup water and stir carefully.
- Allow the potatoes and masala to cook together for a few minutes.
- The mixture should have enough moisture to help the potatoes cook during the dum process, but it should not be watery.
Step 9: Layer the Rice
- Spread the 80% cooked basmati rice evenly over the potato masala.
- Drizzle a little ghee over the rice.
- Top with: Fried onions, Fresh mint leaves, Fresh coriander, if desired.
- Try to distribute the toppings evenly so every serving gets some of the fragrant onions and herbs.
Step 10: Dum Cook the Biryani
- Cover the pot tightly with a lid.
- Cook on low heat for 10 minutes.
- For an even gentler dum, place the pot on a tawa/griddle.
- Place a heavy object on the lid if necessary to help seal the pot.
- Continue cooking on low heat for another 15 minutes.
- Turn off the heat and allow the biryani to rest, covered, for approximately 5–10 minutes before opening the lid.
- This resting time allows the flavours to settle and the rice to absorb the aromatic steam.
Step 11: Gently Mix and Serve
- Open the lid and enjoy the beautiful aroma of the dum-cooked biryani.
- Use a flat spoon to gently lift the rice and potatoes from the bottom.
- Avoid aggressively mixing the layers, as this can break the rice grains.
- Serve hot with your favourite sides.

Aloo Dum Biryani | आलू दम बिरयानी
Ingredients
- 200 gm Baby potatoes, or regular potatoes cut into chunks
- 1 cup Basmati Rice
- 4 - 5 nos Garlic cloves
- 1 inch Ginger
- 2 nos Onions, thinly sliced
- 5 nos Green chillies, slit
- 10 Fresh mint leaves
- 12 nos Cashews
- 2 tbsp Curd
- 3 tbsp Oil
- 2 tsp Ghee
- 1/2 tsp Turmeric powder, for potatoes
- 1/2 tsp Red chili powder, for potatoes
- 1/4 tsp turmeric powder, for marinade
- 1 tsp Red chili powder
- 2 tsp Biryani Masala
- 1 tsp Kasoori methi
- 1/2 tsp Garam masala powder
- 2 nos Bay leaves
- 2 nos Green cardamom pods
- 1 small piece Cinnamon
- Salt to taste
Instructions
- Firstly, wash the basmati rice 2–3 times until the water runs relatively clear.
- Now soak the rice in enough water for 15–20 minutes.
- Coarsely grind the ginger and garlic together and set aside.
- Heat 1 tablespoon oil and fry the sliced onions until light golden and caramelized. Remove and set aside.
- Peel and score the baby potatoes. If using regular potatoes, cut them into medium-sized chunks.
- Now place the potatoes in a bowl. Toss the potatoes with turmeric - 1/4 tsp, red chilli powder - 1/2 tsp, cashews - 10 and 1 tablespoon oil. Mix it well.
- Heat the same pan used to fry the onions.. Stir-fry the potatoes for 4–5 minutes until lightly golden. Remove and set aside.
- Take a large mixing bowl. Add 2 tablespoons curd and whisk until smooth. Then add kasoori methi 1 tsp, turmeric powder - 1/4 tsp, red chilli powder - 1 tsp, biryani masala - 2 tsp, fried onions, 4 -5 slit green chillies, fresh mint leaves, salt to taste, garam masala poowder- 1/2 tsp and 1 teaspoon ghee. Mix everything well.
- Add the fried potatoes and mix until evenly coated. Marinate for 15–20 minutes.
- Boil approximately 4 cups water with 1 bay leaves, 2 green cardamom, 1 small piece of cinnamon, salt , ½ teaspoon ghee and mint leaves.
- Now add the soaked rice and cook until approximately 80% cooked. Drain immediately.
- Heat 2 tablespoons oil in a heavy-bottomed pot. Add 1 green chilli and 1 tbsp ginger-garlic paste and sauté until fragrant.
- Add the marinated potatoes and remaining marinade. Add approximately ½ cup water and mix gently.
- Spread the 80% cooked rice evenly over the potato layer.
- Drizzle ghee over the rice and top with fried onions and fresh mint or coriander.
- Cover tightly and cook on low heat for 10 minutes.
- Place the pot on a tawa and continue dum cooking on low heat for another 15 minutes.
- Turn off the heat and let the biryani rest, covered, for 5–10 minutes.
- Gently fluff the rice and serve hot with onion raita, cucumber salad and lemon wedges.
