Karela, also known as bitter gourd, is one of those vegetables that people either absolutely love or try to avoid because of its bitterness. But this Stuffed Karela Recipe completely changes the game!
These delicious bharwa karelas are filled with a spicy, nutty, slightly sweet coconut-peanut stuffing that perfectly balances the natural bitterness of karela. The stuffing is packed with roasted peanuts, coconut, spices, tamarind, and dates, creating an incredible burst of flavor in every bite.
What makes this recipe truly special is the technique — first steaming the karelas until tender and then shallow frying them until beautifully golden and flavorful. This method keeps them soft inside while giving them a delicious roasted texture outside.

Ingredients
- 300 gm small karela (bitter gourd)
- ½ cup peanuts
- 1 cup grated coconut
- 4 green chilies
- ½ inch ginger
- Small piece tamarind
- 5 dates
- ¼ tsp turmeric powder
- ½ tsp red chili powder
- ½ tsp cumin powder
- ½ tsp coriander powder
- 7 black peppercorns
- 1 tsp roasted besan
- Salt as per taste
- 2–3 tbsp fresh coriander leaves, chopped
- 2–3 tbsp oil
- ½ tsp mustard seeds
- 1 dried red chili
- 1/8 tsp hing (asafoetida)
- 1 sprig curry leaves
Method
Step 1: Prepare the Karela
- Firstly wash the karelas thoroughly under running water.
- Then, trim both ends and make a slit in the center lengthwise without cutting them fully into two halves.
- Now carefully remove the seeds from inside using a spoon or knife.
- Repeat the same process for all the karelas.
If you prefer less bitterness, you can sprinkle salt over the karelas and keep them aside for 20 minutes before rinsing.
Step 2: Prepare the Flavorful Stuffing
- Noe heat a pan and add peanuts.
- Roast them on low flame until crunchy and aromatic.
- After a few minutes, add grated coconut and roast together until the coconut turns slightly light golden.
- Switch off the flame and allow the mixture to cool slightly.
- Transfer everything to a mixer jar.
- Now add: Green chilies 4, 1/2 inch Ginger, small piece tamarind, 5 Dates, 1/4 tsp Turmeric powder, 1/2 tsp Red chili powder , 1/2 tsp Cumin powder, 1/2 tsp Coriander powder, 7 Black peppercorns 1 tsp Roasted besan, Salt to taste
- Grind the mixture into a slightly coarse stuffing. Do not make a smooth paste — a slightly coarse texture tastes much better.
- Transfer the stuffing to a bowl and mix in freshly chopped coriander leaves.
- This same stuffing can also be used for stuffed brinjal (bharwa baingan)!
Step 3: Stuff the Karelas
- Carefully fill each karela with the prepared stuffing.
- Press gently so the stuffing stays inside properly.
- Repeat for all the karelas
Step 4: Steam the Stuffed Karelas
- Add some water to a deep pan or pressure cooker.
- Place a stand or sieve inside and arrange the stuffed karelas over it.
- Cover with a lid and steam for about 10 minutes.
- After steaming, check with a knife — the karelas should feel soft from outside.
Why Steam First?
Steaming softens the karela and reduces bitterness while helping it cook evenly.
Step 5: Shallow Fry the Karelas
- Heat 2–3 tablespoons oil in a pan. Next add Mustard seeds – 1/2 tsp, 1Dried red chili, 1/8 tsp Hing and 1 sprig Curry leaves.
- Once the mustard seeds crackle, place the steamed stuffed karelas gently into the pan.
- Cook on low flame while turning occasionally so they cook evenly from all sides.
- Shallow fry for about 5–7 minutes until lightly golden and beautifully roasted.
