- 2 med Boiled potatoes
- 2 tbsp Cornstarch
- 1/4 tsp Red chili flakes
- 1 pkt Maggi Masala seasoning
- 1 tbsp fresh coriander, finely chopped
- Salt, to taste
- Oil, for deep frying
Mash or finely grate the boiled potatoes until smooth. Make sure the potatoes are not watery.
Add cornstarch, red chili flakes,Maggi Masala seasoning, salt, and chopped coriander.
Mix and knead everything together to form a soft but firm dough. Do not add water.
Lightly grease your work surface and divide the dough into three portions.
Roll one portion into a long, even log.
Cut the log into small, equal-sized pieces.
Flatten each piece slightly and press with a fork to create decorative ridges.
Repeat with the remaining dough.
Heat oil in a kadai over medium heat.
Carefully add the potato bites to the hot oil without over crowding the pan.
Fry over medium heat for about 3–4 minutes, turning occasionally, until golden and crisp.
Remove with a slotted spoon and drain on kitchen paper. Serve hot with ketchup, mayonnaise, chutney, or your favorite dipping sauce.
- Use dry boiled potatoes with minimal moisture.
- Cornstarch can be replaced with rice flour or all-purpose flour.
- Do not overcrowd the kadai while frying.
- Maintain medium heat for evenly cooked, crispy potato bites.
- The shaped uncooked bites can be prepared ahead and refrigerated until ready to fry.
