The best part is that you can prepare the potato bites in advance and fry them just before serving, making them a great option when guests are coming over.

- 2 medium boiled potatoes
- 2 tablespoons cornstarch
- ¼ teaspoon red chili flakes
- 1 packet Maggi Masala seasoning
- Salt, to taste
- 1 tablespoon fresh coriander, finely chopped

Method
Step 1: Mash the Potatoes
- Take 2 boiled potatoes and mash them thoroughly until smooth.
- You can also grate the boiled potatoes using a fine grater. Make sure there are no large lumps.
Important: The potatoes should not contain excess moisture. Wet or watery potatoes can make the dough sticky and make the bites difficult to shape.
Step 2: Make the Potato Dough
- Add the following to the mashed potatoes: ¼ teaspoon red chili flakes, 2 tablespoons cornstarch, 1 packet Maggi Masala seasoning, Salt, as needed, 1 tablespoon finely chopped fresh coriander. Mix everything thoroughly.
- Knead the mixture with your hands until it comes together into a soft but firm dough.
- Avoid adding water. The moisture already present in the potatoes should be enough to bring the dough together.
Step 3: Divide the Dough
- Lightly grease your work surface or board with a little oil.
- Place the potato dough on it and divide it into three portions.
- Keep two portions covered in a bowl while you work with the first portion.
Step 4: Shape the Potato Bites
- Take one portion and roll it into a long, even log.
- Using a knife, cut the log into small, equal-sized pieces.
- You can leave them as small cubes or give them any shape you prefer.
- For a simple decorative finish, gently flatten each piece and press a fork over the surface to create small ridges.
- Repeat with the remaining dough.
Step 5: Heat the Oil
- Heat enough oil for deep frying in a kadai over medium heat.
- The oil should be properly hot before adding the potato bites, but it should not be smoking hot.
- To test the oil, drop a tiny piece of dough into it. It should rise gradually with gentle bubbling around it.
Step 6: Fry the Potato Bites
- Carefully place the potato bites into the hot oil, one by one. Don’t overcrowd the kadai.
- Fry them over medium heat, gently turning them occasionally with a slotted spoon.
- Continue frying until the potato bites become golden, crisp, and lightly browned.
- They usually take around 3–4 minutes, depending on their size and the temperature of the oil.
Step 7: Drain and Serve
- Remove the crispy potato bites from the oil and place them on a plate lined with kitchen paper to absorb excess oil.
- Serve immediately with tomato ketchup, chili sauce, cheese dip, or mayonnaise.

5. Maintain the right oil temperature
