If you’ve ever visited Thane, chances are you’ve heard of the famous Gajanan Vada Pav. Unlike ordinary Vada Pav stalls, Gajanan has its own unique identity. Ingredients
For the Potato Filling
- 8 boiled potatoes
- 6 green chillies
- 1-inch ginger
- Fresh coriander (including tender stems)
- 1½ tbsp oil
- 1 tsp mustard seeds
- 1 sprig curry leaves
- ¼ tsp turmeric powder
- A pinch of asafoetida (hing)
- Salt to taste
For the Besan Batter
- 3 cups gram flour (besan)
- ¼ tsp turmeric powder
- Salt to taste
- ¼ tsp baking soda
- About 2 cups water (or as required)
- Oil for deep frying
For the Famous Yellow Besan Chutney
- Prepared besan batter (used to make fried besan crumbs)
- 1 tbsp oil
- ¼ tsp cumin seeds
- 1 tsp prepared thecha
- ¼ tsp turmeric powder
- Salt to taste
For Green Chilli Thecha
- 6–7 green chillies
- Salt to taste
- 1 tsp hot oil
Method
Step 1 – Prepare the Besan Batter
- Start by taking 3 cups of gram flour (besan) in a large mixing bowl. We’re using a larger quantity because the same batter will be used for frying the vadas as well as preparing the signature chutney.
- Now add turmeric powder – 1/4 tsp, salt, and baking soda – 1/4 tsp.
- Gradually pour in water (1 & 1/2 cup) while whisking continuously until you get a smooth batter with no lumps.
- The consistency should be medium—not too thick and not too runny. It should coat the back of a spoon nicely.
- Cover the batter and let it rest for 10 minutes.
Step 2 – Prepare the Potato Filling
- In a mixer jar, add: Green chillies – 6, Ginger – 1 inch, Coriander stems.
- Grind them into a slightly coarse paste.
- Now Peel the 8 medium size boiled potatoes and lightly mash them.
- Do not mash them into a smooth paste. Small potato pieces give the filling a much better texture.
- Also, choose potatoes that are slightly starchy. Avoid overly waxy or excessively sweet potatoes.
- Lets prepare bhaji. Heat a kadai over medium heat. Add oil 1.5 tbsp.
- Once hot, add: Mustard seeds – 1 tsp, Curry leaves, About 1½ teaspoons of the prepared chilli-ginger paste (reserve some for the chutney), a pinch of hing, Turmeric powder – 1/4 tsp.
- Sauté for a minute until aromatic.
- Add the mashed potatoes and salt.
- Mix everything well and cook for about 3–4 minutes, stirring continuously so the spices coat every piece of potato.
- Finish by adding finely chopped coriander leaves.
- Turn off the heat and transfer the mixture to a plate.
- Allow it to cool completely.
- Once cool, shape the mixture into medium-sized balls or flattened patties, depending on your preference.
Step 3 – Prepare the Besan for the Signature Chutney
- Bring about 1½ cups of water to a boil.
- Add a small pinch of salt.
- Turn off the heat and keep the hot water aside.
- Heat oil in another kadai.
- Using a spoon, drizzle small amounts of the prepared besan batter into the hot oil to make tiny crispy besan crumbs.
- These fried crumbs are the secret ingredient of Gajanan-style chutney.
- As soon as they turn crispy, remove them from the oil and immediately transfer them into the hot water.
- Continue until all the crumbs are prepared.

Soaked besan crumbs and transfer them to a mixer. Keep it aside.
Step 4 – Fry the Batata Vadas
- Dip each prepared potato ball into the besan batter, making sure it is coated evenly.
- Carefully place it into medium-hot oil.
- Deep fry over medium heat until beautifully golden and crisp.
- While frying, tiny pieces of besan batter will naturally fall into the oil.
- Don’t throw them away!
- Collect them and add them to the hot water with the other fried besan crumbs.
- Once the vadas are golden, remove them onto a plate lined with paper towels.
- Repeat with the remaining potato balls.
Step 5 – Prepare the Famous Yellow Besan Chutney
Don’t drain the soaked besan crumbs, transfer them in to a mixer along with water.
Heat oil in a pan. Cumin seeds – 1/4 tsp, reserve thecha – 1 tsp, turmeric pwoder – 1/4 tsp and saute it.
Now add the ground besan mixture.Pour in a little water and stir continuously. Season with salt. If required, add a little more turmeric for the authentic yellow colour.
Cook for about 3–4 minutes, or until it comes to a gentle boil.
The chutney will gradually become thick and creamy, similar to Maharashtrian Pithla.
Do not overcook because it thickens considerably as it cools.
Step 6 – Prepare the Green Chilli Thecha
- Add the following to a mixer jar: Green chillies – 6 (not spicy),
- Add Salt – 1/8 tsp, 1 teaspoon hot oil used for frying.Grind coarsely.
- The thecha should never be completely smooth. Its coarse texture gives it the authentic Maharashtrian flavour.
Step 7 – How to Serve
- Place a soft pav on a green leaf.
- Serve it with: One hot and crispy Batata Vada, A generous spoonful of the yellow besan chutney and A spoonful of spicy green chilli thecha
- Pair it with a glass of hot cutting chai, and you have the ultimate Mumbai street food experience right at home.
