Ingredients

For the Stuffing

  • 1 tablespoon oil
  • 1 tablespoon ginger and green chili paste
  • ¼ cup boiled green peas
  • ¼ cup finely chopped capsicum (green bell pepper)
  • ¼ teaspoon turmeric powder
  • ½ teaspoon roasted cumin powder
  • ¼ teaspoon red chili powder
  • A pinch of black pepper powder
  • 1 teaspoon Pav Bhaji Masala
  • ½ teaspoon dry mango powder (amchur)
  • 1 teaspoon Kasuri methi (dried fenugreek leaves)
  • 3 medium potatoes, boiled and mashed
  • ½ cup paneer, cut into small cubes
  • Salt to taste
  • Fresh coriander leaves, finely chopped

For the Puff Pastry Dough

  • 2 cups all-purpose flour (maida)
  • 1 tablespoon butter
  • 2 tablespoons oil
  • ¼ teaspoon salt
  • Water, as needed

For the Layering Mixture

  • 3 tablespoons cornstarch
  • 3 tablespoons ghee

For Frying

  • Oil for deep frying

Method

Step 1: Prepare the Flavorful Stuffing

  1. Heat 1 tablespoon of oil in a pan over medium heat. Add the ginger and green chili paste and sauté for 1–2 minutes until the raw aroma disappears.
  2. Add the boiled green peas and finely chopped capsicum, and cook for 3–4 minutes until they soften slightly.
  3. Now add the following spices: Turmeric powder – 1/4 tsp, Roasted cumin powder – 1/2 tsp, Red chili powder – 1/4 tsp,  Black pepper powder – a pinch , Pav Bhaji Masala – 1 tsp,  Dry mango powder (amchur) – 1/2 tsp,  Kasuri methi – 1 tsp. 
  4. Cook the spices for another 2–3 minutes so they release their rich aroma and blend beautifully with the vegetables.
  5. Next, add the boiled mashed potatoes and paneer cubes. Season with salt according to your taste and mix everything thoroughly until well combined.
  6. Cook the stuffing for 5–7 minutes, stirring occasionally. Finish by mixing in freshly chopped coriander leaves.
  7. Your delicious bakery-style stuffing is now ready. Set it aside and allow it to cool completely before filling the pastries.

Step 2: Prepare the Puff Pastry Dough

  1. In a large mixing bowl, combine: All-purpose flour –  2 cup, Butter – 1 tbsp. Oil – 2 tbsp and Salt.
  2. Now rub the butter and oil into the flour using your fingertips until the mixture resembles coarse breadcrumbs.
  3. Gradually add water while mixing and knead into a medium-soft dough, similar to chapati dough.
  4. Knead the dough for about 8–10 minutes until it becomes smooth and elastic.
  5. Cover the dough with a damp cloth and let it rest for 10 minutes.

Step 3: Prepare the Layering Paste

  1. While the dough is resting, prepare the layering mixture.
  2. Mix together Cornstarch – 3 tbsp and Ghee – 3 tbsp. Mix until you get a smooth, lump-free paste.
  3. This simple mixture is the secret ingredient that creates dozens of flaky bakery-style layers inside the puff pastry.

Step 4: Create the Signature Puff Layers

  1. Divide the rested dough into 10 equal portions.
  2. Roll each portion into a very thin sheet. The thinner the sheets, the flakier your pastry will become.
  3. Place one sheet on your work surface and spread a thin, even layer of the cornstarch-ghee mixture over it.
  4. Place a second sheet on top and spread another layer of the mixture.
  5. Repeat the same process until five sheets are stacked together.
  6. Fold the layered stack in half, spread a little more layering mixture, and fold it once again.
  7. Prepare the second batch in the same way using the remaining five sheets.
  8. Wrap or cover both layered dough blocks and refrigerate them for 10–15 minutes.
  9. Chilling helps firm up the layers and makes the dough much easier to roll without tearing.

Step 5: Shape the Puff Pastries

  1. Lightly dust your work surface with flour.
  2. Roll one chilled layered dough block into a thin square sheet.
  3. Trim the edges to create neat, even sides.
  4. Cut the sheet into 4 or 6 equal squares, depending on the desired size.
  5. Place a spoonful of the prepared stuffing in the center of each square.
  6. Avoid overfilling, as too much stuffing may burst out while frying.
  7. Brush a little water along the edges and fold each square over to seal.
