- 3 paneer slices, cut into square pieces
- 4 tablespoons all-purpose flour (maida)
- 2 tablespoons corn starch
- 1 tablespoon mango pickle (aam ka achar)
- 1 tablespoon tomato ketchup
- ½ teaspoon red chili powder
- A pinch of baking powder
- Salt, to taste
- Chilled water, as required
For the Crispy Coating
- ½ cup breadcrumbs
- 2 tablespoons lightly roasted poha (flattened rice)
- ⅛ teaspoon black pepper powder
- 1 teaspoon peri-peri masala
- A little salt, to taste
For the Pickle Mayonnaise
- 4 tablespoons mayonnaise
- 1 teaspoon mango pickle
- 1½ tablespoons tomato ketchup
For the Burger
- 3 burger buns
- 3 cheese slices, optional
- Tomato slices
- Lettuce leaves
- Butter, for toasting the buns
Method
Step 1 - Prepare the batter
- In a bowl, add the all purpose flour – 2, corn starch – 2 tbsp, mango pickle – 1 tbsp, tomato ketchup – 1 tbsp, red chili powder – 1/2 tsp, baking powder – a pinch, and salt.
- Gradually add chilled water and whisk to make a thick, smooth batter. Add the water little by little so that the batter does not become too thin. A few small pieces of pickle in the batter are perfectly fine.
- Mix well until there are no lumps. Keep the batter aside.
Step 2 - Prepare the crispy coating
- In a separate plate or bowl, add the breadcrumbs – 1/2 cup and lightly roasted poha – 2 tbsp. The roasted poha gives the paneer an extra crispy texture.
- Add a little salt, black pepper powder – 1/8 tsp, and peri-peri masala – 1 tsp. Mix everything well and keep the coating mixture aside.
Step 3 - Make the pickle mayonnaise
- In a small bowl, combine the mayonnaise – 4 tbsp, mango pickle – 1 tsp, and tomato ketchup – 1 1/2 tbsp.
- Mix well until everything is evenly combined. Your creamy, tangy pickle flavored mayonnaise is ready.
Step 4 - Coat the paneer
- Take a paneer slice and dip it into the prepared batter. Make sure it is completely coated on all sides.
- Remove the paneer from the batter and place it into the breadcrumb mixture. Coat it thoroughly, pressing the breadcrumbs gently onto the paneer so that the coating sticks well.
- Repeat with the remaining paneer slices.
Step 5 - Fry the paneer
