- ½ cup vanilla custard powder
For the Sharbat
- 2 tablespoons sabja seeds (basil seeds)
- 2 tablespoons sago (sabudana)
- 2 teaspoons sliced almonds and pistachios
- Ice cubes, as needed

Method
Step 1 - Prepare the Strawberry Jelly
- First, prepare the strawberry jelly according to the instructions given on the packet.
- Bring 500 ml water to a boil. Add the strawberry jelly powder and stir well until completely dissolved.
- You can use any jelly flavor you like if strawberry isn’t your favorite.
- Pour the prepared jelly mixture into a tray or container and refrigerate for about 1 hour, or until completely set.
Step 2 - Prepare the Custard Milk
- Take about ½ cup milk from the 1 litre milk and place it in a bowl.
- Add ½ cup vanilla custard powder and whisk well until there are no lumps.
- Pour the remaining milk into a deep pan and bring it to a boil.
- Once the milk comes to a boil, add ½ cup sugar and stir well.
- Now gradually add the custard mixture while continuously stirring.
- Keep the flame on low and continue stirring so that the custard doesn’t stick to the bottom or form lumps.
- Once the custard becomes thick and creamy, turn off the heat.
- Allow it to cool completely, then refrigerate until nicely chilled.
Step 3 - Cook the Sago
- Add 3 cups water to a saucepan and bring it to a boil.
- Add 2 tablespoons sago and cook for about 9–10 minutes, or until the sago becomes soft and translucent.
- Drain the cooked sago through a strainer.
- Immediately rinse it with cold water to stop the cooking process and prevent it from becoming overly sticky.
Step 4 - Soak the Sabja Seeds
- In a separate bowl, add 2 tablespoons sabja seeds.
- Add enough water and allow them to soak for about 10–15 minutes, or until they swell and become soft.
- Drain any excess water.
Step 5 - Cut the Jelly
- After about an hour, check the jelly. Once it is completely set, remove it from the refrigerator.
- Cut the jelly into small bite-sized pieces.
- There is something so satisfying about cutting perfectly set jelly into little cubes!
Step 6 - Assemble the Custard Jelly Sharbat
- Take a large bowl and add the chilled custard milk.
