Combine all purpose flour - 4 tbsp, corn starch - 2 tbsp, mango pickle - 1 tbsp, tomato ketchup - 1 tbsp, red chili powder - 1/2 tsp, a pinch baking powder, and salt in a bowl.
Gradually add chilled water and whisk to make a thick, smooth batter. Set aside.
In another bowl, combine breadcrumbs - 1/2 cup, roasted poha - 2 tbsp, black pepper powder - 1/8 tsp, peri peri masala - 1 tsp, and salt.
Mix mayonnaise - 4 tbsp, mango pickle - 1 tsp, and tomato ketchup - 1 & 1/2 tbsp in a small bowl to prepare the pickle mayonnaise.
Dip each paneer slice into the batter, making sure it is coated on all sides.
Transfer the battered paneer to the breadcrumb mixture and coat thoroughly.
Heat oil over medium heat and fry the paneer until crisp and golden on both sides.
Transfer the fried paneer to kitchen paper to remove excess oil.
Heat a tawa or skillet and toast the burger buns with a little butter.
Spread pickle mayonnaise over the bottom bun.
Add lettuce, crispy paneer, tomato slices, and cheese, if using.
Cover with the top bun and serve immediately.
Serve these crispy Paneer Achari Burgers immediately while the paneer is hot and crunchy. They taste delicious on their own, but you can make them into acomplete meal by serving them with French fries, Tomato ketchup, mint chutney, or extra pickle mayonnaise for dipping.
