Firstly, take 1.5 tbsp curd in a large mixing bowl. Then, add 1/8 tsp turmeric powder, ¼ tsp coriander powder, ½ tsp garam masala, ¼ tsp black pepper powder, and salt as per taste. After that, mix well to combine the spices with the curd.
Next, add 2 tbsp gram flour (besan) to the mixture and mix again until smooth. This will help bind the stuffing together. Once the ingredients are well combined, you can proceed to the next step.
Now, to the prepared mixture, add 2 finely chopped green chilies, 2 tbsp chopped green capsicum, 1 finely chopped tomato, 2 tbsp chopped spinach, 1 cup grated zucchini, ¼ cup grated paneer.
After adding the vegetables, mix everything well to form a thick spreadable mixture. Make sure the zucchini is in a higher quantity, as it gives the toast a moist and flavorful texture. Then, proceed to the next step.
Now, take bread slices and evenly spread the prepared zucchini-paneer mixture on top. Then, press gently so that the mixture sticks well to the bread.
After that, repeat the process for all slices and keep them ready for toasting.
Next, heat a tawa (griddle) on medium heat and add some ghee. If you prefer, you can also use butter or oil. Then, place the bread on the tawa with the stuffed side facing down.
After that, cook on medium heat until the base turns crispy and golden brown. Meanwhile, drizzle a little ghee on top and carefully flip the toast.
Then, cook the other side until the bread is well toasted and golden. Once both sides are crisp and evenly cooked, remove from the tawa.
Now that your Zucchini & Paneer Toast is ready, serve it hot with curd, mint chutney, or tomato ketchup. Additionally, you can enjoy it with a glass of fresh juice or masala chai for a complete breakfast.
