If there’s one comforting Indian sabzi that instantly reminds you of home-style food, it has to be Aloo Bhindi Masala. This simple yet flavorful combination of crispy potatoes and perfectly cooked okra coated in rich masala is pure comfort food.

But let’s be honest — many people avoid making bhindi because it can turn sticky or slimy while cooking.
This recipe solves that problem completely!

In this version, both the potatoes and bhindi are lightly stir-fried first, which gives them a delicious texture and prevents the okra from becoming sticky. The roasted besan and spiced curd masala add an incredible depth of flavor that makes this sabzi taste restaurant-style while still feeling homemade.

Serve it with hot roti, paratha, or dal-rice, and you’ve got a meal everyone will love.

Ingredients

  • 250 gm lady finger (bhindi/okra)
  • 1 potato, sliced lengthwise
  • 1 tomato, finely chopped
  • 4 tbsp curd
  • ¼ tsp turmeric powder
  • ½ tsp red chili powder
  • 1 tsp coriander powder
  • ¼ tsp cumin powder
  • 3 tbsp oil
  • ¼ tsp mustard seeds
  • 1/8 tsp fenugreek seeds
  • 2 dried red chilies
  • 1/8 tsp hing (asafoetida)
  • ¼ tsp finely chopped ginger
  • 2 green chilies
  • 1 tbsp roasted besan
  • Salt to taste
  • 2 tbsp chopped fresh coriander leaves

Method

Step 1: Prepare the Vegetables

  1. Firstly, wash the bhindi thoroughly and dry it completely using a kitchen towel.
  2. Dry bhindi helps prevent stickiness while cooking.

  3. Now trim both ends of the bhindi and cut it into medium-sized pieces.

  4. Next,  peel the potato and cut it lengthwise into thin slices. Keep the sliced potatoes in water to prevent discoloration.
  5. Finely chop the tomato and keep everything ready

Step 2: Prepare the Spiced Curd Mixture

  1. In a bowl, add: 4 tbsp Curd, 1/4 tsp turmeric powder,  1/2 tsp Red chili powder,  1 tsp Coriander powder and  1/4 tsp Cumin powder.
  2. Mix everything well until smooth and lump-free.
  3. This curd mixture gives the sabzi a rich, flavorful coating.

Step 3: Fry the Potatoes 

  1. Heat 2 tablespoons oil in a kadhai or pan.
  2. Once the oil is hot, add the sliced potatoes.
  3. Stir-fry them on medium heat until they turn golden, slightly crispy, and beautifully cooked from inside. Slightly crispy potatoes make this sabzi extra delicious.
  4. Now remove the potatoes and keep them aside.

Step 4: Stir-Fry the Bhindi

  1. In the same pan, add the bhindi.
  2. Cook for about 4–5 minutes while stirring occasionally.
  3. The bhindi should become slightly tender and lightly roasted without turning mushy.
  4. Once done, remove it from the pan and keep aside.
  5. Pre-frying the bhindi prevents sliminess and keeps the texture perfect.

Step 5: Prepare the Masala

  1. In the same kadhai, add 1–2 teaspoons oil if needed.
  2. Now add Mustard seeds – 1/4 tsp, Fenugreek seeds 1/8 tsp, Dried red chilies 2 and 1/8 tsp hing.. 
  3. Let them crackle for a few seconds.
  4. Add chopped tomatoes and cook until slightly soft.
  5. Now add Chopped ginger & Green chilies
  6. Sauté for another minute until fragrant.
  7. Next, add roasted besan and mix well.
  8. The roasted besan helps thicken the masala and gives a wonderful nutty flavor.

Step 6: Add the Curd Mixture

  1. Lower the flame and add the prepared curd mixture.
  2. Cook while stirring continuously until the masala becomes thick, aromatic, and starts releasing oil from the sides.
  3. Cook the masala patiently for the best flavor.

Step 7: Combine Everything

  1. Now add Fried potatoes, Stir-fried bhindi and Salt to taste.
  2. Mix gently so the masala coats the vegetables evenly without breaking them.
  3. Cook for another 2–3 minutes on low flame.
  4. Finally, add freshly chopped coriander leaves and mix lightly.
  5. And your delicious Aloo Bhindi Masala is ready to serve!
