Mango Sago Pudding Recipe | Chilled & Refreshing Mango Sago Pudding

Ingredients –

  • Mango pulp – 3
  • Sago – ¼ cup
  • Rice flour – ¼ cup
  • Milk / Coconut milk – 1 & ½ cup
  • Condense mill – 3 tbsp
  • Soaked sabja – ¼ cup
  • Tutti-frutti – 2 tbsp
  • Ice cubes – as required
  • Water – as required

Method -

Step 1 – Prepare the Rice Flour Marble Balls

  1. First, we will prepare small chewy rice flour balls that add a lovely texture to the pudding.
  2. Take ¼ cup rice flour in a bowl.
  3. Gradually add water little by little and knead it into a soft dough.
  4. Do not add too much water at once. The dough should be soft and smooth, not sticky.
  5. Once the dough is ready, pinch small portions and roll them into tiny marble-sized balls.
  6. Keep the balls small so they cook evenly and look beautiful in the pudding.

Step 2 – Boil the Rice Balls

  1. Heat water in a pan or kadai. Once the water starts boiling, add the rice flour balls carefully.
  2.  Cook them for around 15 minutes or until they become soft and slightly glossy.
  3. After cooking, remove them and immediately transfer them into cold water.
  4. This helps stop the cooking process and prevents the balls from sticking together.

Step 3 – Cook the Sabudana

  1. Now boil 1 liter of water in a deep pan.
  2. Add ¼ cup sabudana to the boiling water.
  3. Cook it on medium heat for around 20 minutes or until the sabudana turns completely transparent.
  4. If the center still looks white, continue cooking for a few more minutes.
  5. Stir occasionally while cooking to prevent the sabudana from sticking to the bottom.
  6. Once cooked, strain the sabudana and rinse it with chilled water.
  7. This step keeps the pearls separate and prevents them from becoming sticky.

Step 4 – Prepare the Mango Pulp

  1. Peel and chop 2–3 ripe mangoes.
  2. Transfer the mango pieces to a blender jar.
  3. Add ½ cup milk and blend until smooth and creamy.
  4. You can use: Regular milk, Coconut milk, Almond milk depending on your preference.
  5. Transfer the smooth mango puree into a large mixing bowl.
  6. Use sweet and juicy mangoes like Alphonso or Kesar for the best flavor.

Step 5 – Assemble the Pudding

  1. Now add the following ingredients into the mango puree Boiled sabudana, Rice flour marble balls, ¼ cup soaked sabja seeds, 1 cup coconut milk or regular milk, 3 tbsp condensed milk, ½ cup chopped mango pieces, 2 tbsp tutti-frutti and some Ice cubes
  2. Mix everything gently until well combined.
  3. The pudding should look creamy, colorful, and rich.
  4. Adjust the sweetness according to the sweetness of your mangoes.
  5. If your mangoes are very sweet, reduce the condensed milk slightly.

Step 6 – Chill & Serve

  1. Refrigerate the pudding for at least 1–2 hours before serving.
  2. Serve it chilled in dessert bowls or glasses. You can garnish it with: Mango cubes, Mint leaves, Extra sabja seeds, Chopped nuts, Ice cream for an even richer dessert experience.
