Today, we are making a sweet, tangy, and refreshing mango trio — homemade Aam Papad, spicy-sweet Khatta Meetha Mango Chutney, and chilled Chatpata Mango Panna.

Ingredients

  • 1 raw mango (preferably not too sour)
  • 1 ripe sweet mango
  • ½ cup fresh mint leaves
  • ¼ tsp dry ginger powder
  • ¼ tsp chaat masala
  • ¼ tsp red chili flakes
  • 1/8 tsp black salt
  • 1 cup rock sugar (mishri) or regular sugar
  • Juice of ½ lemon
  • 2 cups water
  • 2 tbsp soaked sabja seeds
  • Ice cubes, as required
  • A little ghee for greasing

Method

Step 1: Prepare the Mango Base

  1. Peel the raw mango and roughly chop it into pieces. Since we are balancing flavors with ripe mango, choose a raw mango that is mildly tangy and not extremely sour.
  2. Now peel and chop the ripe mango as well.
  3. Place a kadai or deep pan on the stove and add both the raw and ripe mango pieces. Pour in 2 cups of water and cover with a lid.
  4. Cook everything on medium-high heat until the mangoes become completely soft and tender. You can also cook them in a pressure cooker if you prefer.
  5. Once cooked, remove the lid and mash the mangoes well while they are still warm. Let the mixture cool slightly.
  6. Transfer the mixture into a blender jar and add fresh mint leaves. Blend everything into a smooth paste.
  7. The fresh mint gives the mixture a cooling freshness that makes all three recipes taste absolutely amazing.

Step 2: Make the Sweet & Spicy Mango Mixture

  1. In the same kadai, add the rock sugar along with a little water and allow it to melt completely.
  2. Once the sugar syrup is ready, add the mango-mint paste and mix thoroughly until smooth and lump-free.
  3. Now add Chaat masala – 1/4 tsp, Dry ginger powder – 1/4 tsp, Black salt – 1/8 tsp.
  4. Mix everything well and cook the mixture for about 15 minutes on low-medium heat.
  5. Finally, add the red chili flakes and squeeze in fresh lemon juice. Stir well.
  6. At this stage, your delicious mango base is ready. This single mixture will now be used to prepare all three recipes.
  7. If you want to store it for a longer time, cook it slightly more until it thickens properly.

Recipe 1: Homemade Aam Papad

  1. To make aam papad, the mango mixture should have a slightly sticky consistency.
  2. Grease a steel plate or tray lightly with ghee. Pour some of the mango mixture onto the plate and rotate it gently so the mixture spreads evenly into a thin layer.
  3. Place the tray under direct sunlight for about 2 days or until completely dry.
  4. Once fully set, cut the aam papad into strips or your favorite shapes and roll them up.
