  • ½ teaspoon corn starch

  • ¼ cup rice
  • 2 cups water
  • A small pinch of salt

For Serving

  • 2 ripe sweet mangoes, sliced
  • Black sesame seeds or lightly fried moong dal for garnish (optional)

Method

Step 1: Prepare the Creamy Coconut Sauce

  1. In a saucepan, add the coconut milk. Fresh coconut milk gives the best rich flavor, but packaged coconut milk works perfectly too.

  2. Now add sugar -1/4 cup, corn starch – 1/2 tsp, a pinch of salt.
  3. Mix everything well until the corn starch dissolves completely.
  4. Place the pan on medium heat and cook while stirring continuously.

  5. Keep stirring the sauce constantly to prevent the coconut milk from curdling and to achieve a smooth, silky texture.

  6. After a few minutes, the sauce will start becoming slightly thick, creamy, and glossy. Once it reaches a smooth pouring consistency, switch off the flame. Our rich coconut sauce is now ready!
