  • ⅓ cup roasted vermicelli

  • ⅓ cup sugar

Step 1: Heat the Milk

  1. Firstly pour 500 ml of milk into a saucepan and bring it to a gentle boil over medium heat.
  2. Reserve ¼ cup of milk separately for preparing the custard mixture. 
  3. Once the milk boils, turn off the heat and set the remaining milk aside.

Step 2: Fry the Dry Fruits in Ghee

  1. Heat one tablespoon of ghee in a heavy bottomed pan over medium heat.
  2. Add the cashews, almonds, and raisins. Fry them over low heat until the nuts become lightly golden and the raisins puff up.
  3. Remove the dry fruits from the pan and keep them in a bowl for later.

Step 3: Roast the Vermicelli

  1. Add ⅓ cup of roasted vermicelli to the same pan.
  2. Roast it gently in the remaining ghee over low heat, stirring continuously so the vermicelli heats evenly and develops a light golden colour.
  3. If your vermicelli is already well roasted, you only need to warm it briefly in the ghee.
  4. Now pour ½ cup of water into the pan and stir well. Let the vermicelli cook for a few minutes until it begins to soften and absorb the water. This step helps the vermicelli cook more evenly before the milk is added.

Step 4: Add the Milk

  1. Pour the previously heated milk into the pan with the vermicelli.
  2. Stir gently and bring the mixture to a gentle simmer. Continue cooking until the vermicelli begins to soften.
  3. Avoid cooking over high heat, as the milk may stick to the bottom of the pan.

Step 5 - Prepare the Custard Mixture

  1. Take the reserved ¼ cup of cold milk in a small bowl. Add one tablespoon of vanilla custard powder and whisk thoroughly until the mixture is completely smooth.
  2. Make sure there are no lumps. Once the kheer starts simmering, lower the heat and slowly pour in the custard mixture while stirring continuously.
  3. Keep stirring for a smooth consistency and to prevent the custard from forming lumps or sticking to the bottom.

Step 6: Add Saffron and Rose Petals

  1. Continue cooking the kheer gently until the vermicelli is completely soft.
  2. Add a pinch of saffron and ½ teaspoon of dried rose petals. Mix well and let the kheer simmer briefly so that the delicate fragrance of saffron and rose petals blends into the milk.

Instructions
 

  • Firstly, reserve ¼ cup of milk for the custard mixture and set the remaining milk aside.
  • Now Heat the milk in a saucepan until it comes to a boil. Once boiled turn off the flame and keep it aside.
  • Heat the ghee - 1 tbsp in a pan. Add the cashews, almonds and raisins, and fry over low heat until lightly golden. Remove and set aside.
  • Add the roasted vermicelli - 1/3 cup to the same pan and roast briefly over low heat, stirring continuously.
  • Pour in the 1/2 cup of water and cook for a few minutes until the vermicelli begins to soften.
  • Add the warm milk and simmer gently, stirring occasionally.
  • In a small bowl, whisk the 1 tbsp custard powder with the reserved cold milk until smooth and lump free.
  • Reduce the heat and slowly add the custard mixture to the simmering kheer, stirring continuously.
  • Cook until the vermicelli is completely soft. Add the a pinch of saffron and 1/2 tsp dried rose petals, and mix well.
  • Add the sugar - 1/3 cup and cook over low heat for another 5–7 minutes, stirring occasionally, until the sugar dissolves and the kheer thickens.
  • Add the cardamom powder - 1/4 tsp and some of the fried dry fruits. Mix well and turn off the heat.
  • Garnish with the remaining dry fruits and serve warm, or chill in the refrigerator before serving.
