For Chena :

  1. Milk – 1 liter
  2. Lemon – 1
  3. Semolina (Suji) – 1 tbsp
  4. Sugar – 1 tbsp
  5. Baking powder – a pinch

For Sugar Syrup:

  1. Caramelized sugar syrup: Sugar – 2 tbsp + Water – ¼ cup
  2. Sugar – 1 cup
  3. Water – 4 cups

Method

Step 1: Preparing Chena

  1. First, bring 1 litre of full-fat cow’s milk to a boil in a heavy-bottomed pan.

  2. Once the milk comes to a boil, turn off the heat. Add the juice of 1 lemon gradually and stir gently. The milk will start separating into soft chena and greenish whey.

  3. If you prefer, you can also use vinegar or nimbu ka phool instead of lemon juice.

  4. Pour the curdled milk through a clean muslin cloth or fine cotton cloth. Rinse the chena gently with cold water to remove any remaining sourness from the lemon juice.

  5. Squeeze out the excess whey and hang the chena for about 10–15 minutes so that the extra moisture drains out.

Tip – Do not leave the chena hanging for too long. It should be well-drained but still soft and slightly moist

Step 2: Kneading the Chena

  1. Transfer the drained chena to a plate or wide bowl.

  2. Knead it with the heel of your palm for about 3–4 minutes, or until it becomes smooth, soft and lump-free.

  3. Now add: 1 tablespoon semolina (suji), 1 tablespoon sugar, A pinch of baking powder.

  4. Mix everything well and knead again until the ingredients are evenly incorporated.

  5. Divide the mixture into equal portions and gently roll each portion between your palms to make smooth, small round balls.

  6. Make sure there are no cracks on the surface of the balls, as smooth chena balls are less likely to break while cooking.

Step 3: Prepare the Caramelized Sugar Syrup

  1. For the caramel syrup, add 2 tablespoons sugar to a pan with a little water.

  2. Cook over low to medium heat until the sugar melts and develops a beautiful golden-brown color.

  3. Once the sugar reaches the desired caramel color, carefully add ¼ cup water. Be cautious while adding the water because hot caramel can splutter.

  4. Stir carefully until you get a smooth caramelized syrup.

  5. Keep this syrup aside. We will add it later while cooking the Kheer Mohan.

  6. Do not over-brown the caramel. If the sugar burns, the syrup can become bitter and affect the taste of the Kheer Mohan.

Step 4: Cook the Chena Balls in Sugar Syrup

  1. In a separate wide pan or kadai, add: 1 cup sugar and 4 cups water. Bring the mixture to a boil.

  2. Once the syrup starts boiling, gently place the prepared chena balls into it.

  3. Cover the pan and cook on high heat for about 15 minutes. Avoid stirring the chena balls during this stage, as they are delicate and can break.

  4. The chena balls will gradually cook and expand as they absorb the sugar syrup. 

Step 5: Add the Caramelized Syrup

  1. After the initial cooking, carefully add the prepared caramelized sugar syrup to the pan.
  2. The caramel syrup gives Kheer Mohan its characteristic golden-brown color and deeper caramelized flavor.
  3. Continue cooking for about 30 minutes, allowing the chena balls to slowly absorb the syrup and develop their soft, spongy texture.
  4. Keep an eye on the syrup while cooking. If it becomes too thick, add a little hot water in small batches to maintain the required consistency.
  5. The total cooking time is approximately 45–50 minutes.

Step 6: Rest the Kheer Mohan
