For Tomato Pakoda

  • 3 tomatoes
  • 1 cup gram flour (besan)
  • 2 tbsp curd
  • ¼ tsp turmeric powder
  • ½ tsp coriander powder
  • ¼ tsp red chili powder
  • ⅛ tsp black pepper powder
  • ¼ tsp carom seeds (ajwain)
  • ⅛ tsp fennel seeds (saunf)
  • ¼ tsp cumin powder
  • 1 green chili, finely chopped
  • 1 tsp kasoori methi
  • Salt to taste
  • 1 tbsp mustard oil
  • 3–4 tbsp water, as needed
  • Oil, for deep frying

For the Tomato Gravy

  • 2 tomatoes, roughly chopped
  • 2 green chilies
  • ½-inch piece ginger
  • 4 tbsp curd
  • ¼ tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp Kashmiri red chili powder
  • ½ tsp red chili powder
  • ¼ tsp cumin powder
  • 1 tsp kasoori methi
  • ¼ cup leftover pakoda batter
  • 3 tbsp oil
  • 1 bay leaf
  • 2 dried red chilies
  • 2 cloves
  • 1 black cardamom
  • 1 small piece cinnamon
  • ⅛ tsp hing (asafoetida)
  • ¼ tsp garam masala
  • Salt to taste
  • 1 tbsp finely chopped coriander leaves
  • Water, as needed

Method

Step 1: Prepare the Tomato Pakoda Batter

  1. In a mixing bowl, add 1 cup besan and 2 tablespoons curd.
  2. Now add turmeric powder – 1/4 tsp, coriander powder – 1/2 tsp, red chili powder – 1/4 tsp, a pinch of  black pepper powder, ajwain – 1/4 tsp, fennel seeds – 1/8 tsp, cumin powder – 1/4 tsp, finely chopped green chili – 1 , kasoori methi – 1 tsp, and salt to taste.
  3. Next add 1 tablespoon mustard oil and mix everything well.
  4. Gradually add 3–4 tablespoons of water and prepare a thick, smooth batter. The batter should be thick enough to coat the tomato slices properly.
  5. Set the batter aside while you prepare the tomatoes.

Step 2: Coat and Fry the Tomato Pakodas

  1. Now cut the 3 tomatoes into slices.
  2. Heat oil in a kadai over medium heat for deep frying.
  3. Them take one tomato slice at a time and coat it evenly with the prepared besan batter.
  4. Carefully place the coated tomato slice into the hot oil.
  5. Fry the pakodas over medium heat, turning them occasionally, until they are evenly cooked and golden brown from both sides.
  6. Remove the fried tomato pakodas and place them on a plate lined with paper towels.
  7. Repeat with the remaining tomato slices.
  8. Do not discard the leftover pakoda batter. We will use about ¼ cup of it to thicken and flavor the gravy.

Step 3: Prepare the Tomato Gravy

  1. Now we have to prepare tomato paste, add 2 roughly chopped tomatoes, 2 green chilies, and ½-inch ginger to a blender jar.
  2. Blend until smooth and keep the tomato paste aside.

Step 4: Prepare the Curd Mixture

  1. In a small bowl, add 4 tablespoons of curd.
  2. Next add: ¼ tsp turmeric powder, 1 tsp coriander powder, 1 tsp Kashmiri red chili powder, ½ tsp red chili powder, ¼ tsp cumin powder, 1 tsp kasoori methi.
  3. Whisk everything together until the curd mixture becomes smooth and creamy. Keep the mixture aside.

Step 5: Cook the Gravy

  1. Firstly, heat 3 tablespoons of oil in a kadai over medium heat.
  2. Then add 1 bay leaf, 2 dried red chilies, 2 cloves, 1 black cardamom, 1 small piece of cinnamon, ⅛ tsp hing.
  3. Sauté for a few seconds until the whole spices become aromatic.
  4. Add the prepared tomato paste. Reduce the heat to low, cover the kadai, and cook for about 5 minutes. Stir occasionally to prevent the mixture from sticking or burning.
  5. Once the tomato mixture is well cooked, add the ¼ cup leftover pakoda batter and the prepared curd-spice mixture.
  6. Mix everything thoroughly. Cook on low to medium heat for about 5–7 minutes, stirring continuously or frequently. This helps cook the besan properly and prevents the curd from splitting.
  7. Add water gradually according to your preferred gravy consistency.
  8. Add salt and ¼ tsp garam masala. Mix well.
  9. Cover and simmer for another 15–20 minutes, allowing the spices and flavors to blend into the gravy.

Step 6: Add the Tomato Pakodas

  1. Once the gravy is cooked and reaches your preferred consistency, add the fried tomato pakodas one by one.
  2. Gently coat the pakodas with the gravy.
  3. The pakodas will soften as they absorb the flavorful tomato gravy.

Tip: Add the pakodas just before serving so they retain some texture while soaking up the gravy.

Step 7: Garnish and Serve

  1. Now turn off the heat and garnish the curry with freshly chopped coriander leaves.
  2. You can also add a little red chili tadka on top for extra flavor and color.

For the Tomato Gravy

  • 2 nos Tomatoes, roughly chopped
  • 2 nos Green chilies
  • 1/2 inch Ginger
  • 1/4 tsp Turmeric powder
  • 1 tsp Coriander powder
  • 1 tsp Kashmiri red chili powder
  • 1/2 tsp Red chili powder
  • 1/4 tsp Cumin powder
  • 1 tsp Kasoori methi
  • 1/4 cup Leftover pakoda batter
  • 3 tbsp Oil
  • 1 no Bay leaf
  • 2 nos Dried red chilies
  • 2 no Cloves
  • 1 no Black cardamom
  • 1 small piece Cinnamon
  • 1/8 tsp Hing (asafoetida)
  • 1/4 tsp Garam masala powder
  • Salt to taste
  • 1 tbsp Finely chopped coriander leaves
  • water as needed

Instructions
 

Prepare the batter

  • Firstly, take a mixing bowl, add 1 cup of besan, 2 tbsp curd, tuermeric powder - 1/4 tsp, ½ tsp coriander powder, ¼ tsp red chili powder, ⅛ tsp black pepper powder, ¼ tsp carom seeds (ajwain), ⅛ tsp fennel seeds (saunf), ¼ tsp cumin powder, 1 green chili, 1 tsp kasoori methi, salt to taste, 1 tbsp mustard oil, and pour water to make a thick batter.

Fry the pakodas

  • Slice the tomatoes, coat them in the batter, and deep-fry over medium heat until golden and crisp. Keep it aside.

Prepare tomato paste

  • In a mixer jar add chopped tomatoes - 3, green chilies - 2, and ginger - 1/2 inch piece. Blend until smooth paste. Keep it aside.

Prepare curd mixture

  • Take 4 tbsp curd in to a small bowl, add turmeric powder - 1/4 tsp, coriander powder - 1 tsp, Kashmiri red chili powder - 1 tsp, Red chili (degi lal mirch) powder - 1/2 tsp, cumin powder - 1/4 tsp, and kasoori methi - 1 tsp. Now mix it well and keep it aside.

Cook the gravy

  • Heat 3 tbsp oil in a kadai, add whole spices, 1 bay leaf, 2 dried red chili, 2 cloves, small piece of cinnamon, 1 nlack cardmom pods. Add 1/8 tsp hing powder.
  • Then Add tomato paste and cook well. Add leftover pakoda batter and the curd-spice mixture. Cook thoroughly. Add little water and saute it well.

Adjust consistency

  • Add hot water - 1.5 cup or as needed, then add salt as per taste, 1/4 tsp garam masala powder. Stir it well. Cover and simmer until the gravy is well cooked. Simmer it for 15 -20 minutes.

Add pakodas

  • After 20 minutes, remove lid, add chopped coriander leaves. Our curry is ready, turn off the flame. And gently add the fried tomato pakodas to the gravy. That's it out tomato pakoda curry is ready to serve!
