Ingredients
- 1 cup fresh green peas
- 1 large potato, chopped
- ¼ cup mustard oil
- A handful of fresh coriander leaves
- 2 green chilies
- 1-inch ginger
- 1/8 teaspoon fenugreek seeds (methi dana)
- ¼ teaspoon cumin seeds
- ¼ teaspoon garam masala powder
- 1/8 teaspoon turmeric powder
- ¼ teaspoon red chili powder
- Salt to taste
- 1 tomato, chopped
- Juice of ½ lemon
Method
Step 1: Prepare the Fresh Green Masala
- To begin, prepare the flavorful green masala that gives this sabzi its signature taste.
- Add fresh coriander leaves, green chilies, and ginger to a mixer jar. Pour in a little water and grind everything into a smooth paste.
- This fresh green masala adds freshness, spice, and a beautiful aroma to the curry.
Step 2: Fry the Potatoes
- Heat mustard oil in a deep pan or kadhai over medium flame.

Step 6: Add Fried Potatoes and Peas
- Add the fried potatoes and peas back into the pan.
- Mix everything gently so the masala coats the vegetables evenly.

- Cover and cook for 2–3 minutes so all the flavors blend together beautifully
Step 7: Add Tomatoes
- Add chopped tomatoes and cook for another 2–3 minutes.
- Do not overcook the tomatoes. They should remain slightly chunky and soft rather than completely melting into the gravy.
