Ingredients
For Paneer Stuffing:
- Oil – 1 tbsp
- Cumin seeds – ¼ tsp
- Green chilies (finely chopped) – 2
- Ginger (finely chopped) – ¼ tsp
- Tomato (finely chopped) – 1
- Turmeric powder – 1/8 tsp
- Red chili powder – ¼ tsp
- Coriander powder – ½ tsp
- Capsicum (finely chopped) – ¼ cup
- Boiled paneer – 2 tbsp
- Paneer (grated) – 200 gm
- Red chili flakes – ¼ tsp
- Chaat masala – ¼ tsp
- Black pepper powder – ¼ tsp
- Salt – to taste
- Fresh coriander leaves (finely chopped) – 2 tbsp
For Toast:
- Multigrain bread slices – as required
- Butter – as required
- Green chutney – as required
- Cheese (processed cheese or mozzarella) – as required
Method
Step 1: Prepare the Paneer Stuffing
- Heat a pan and add 1 tablespoon of oil. Once hot, add 1/4 tsp cumin seeds and allow them to crackle, releasing their aroma.
- Now add finely chopped green chilies – 2 and 1/4 tsp ginger. Sauté for a few seconds until the raw smell disappears.
- Add 1 chopped tomato and cook until it becomes soft and slightly mushy. This forms the flavorful base of the stuffing.
- Next, add 1/8 tsp turmeric powder, 1/4 tsp red chili powder, and 1/2 tsp coriander powder. Mix well so the spices blend evenly with the tomato mixture.
- Now add boiled green peas – 2 tbsp, 1/4 cup chopped capsicum. Sauté lightly—do not overcook, as we want the capsicum to stay slightly crunchy.
- Add grated paneer – 1 cup and mix everything thoroughly. This is where the stuffing becomes rich and creamy.
- Now season it with red chili flakes – 1/4 tsp, chaat masala – 1/4 tsp, black pepper powder – 1/4 tsp, and salt as per taste.
- Finally, add freshly chopped coriander leaves for freshness and aroma. Mix everything well and cook for 3–5 minutes on low flame.
- Our flavorful paneer stuffing is now ready. Remove it from heat and set aside.
Step 2: Prepare the Toast
- Heat a pan or tawa and add a little butter.
- Place the multigrain bread slices and toast them until golden brown and crispy on both sides. This adds a perfect crunch to the final dish.
- Once toasted, spread a layer of green chutney on one side of the bread. This adds a tangy and spicy kick.
Step 3: Assemble the Toast
- Now generously spread the prepared paneer stuffing over the bread slice.
- Top it with a good amount of cheese. You can use processed cheese for creaminess or mozzarella for that perfect cheese pull.
- Sprinkle a pinch of red chili flakes on top for extra flavor.
- Cover the pan with a lid and cook on low flame until the cheese melts completely and becomes gooey and stretchy.
