Shimla Mirch ki Sabji is a simple, quick, and extremely flavorful Indian stir-fry made with fresh capsicum (bell peppers) and a special homemade masala. Ingredients
For Masala (Spice Mix)
- Peanuts – 1 tbsp
- Black peppercorns – 4
- Coriander seeds – 1 tbsp
- Cumin seeds – 1/4 tsp
- Fennel seeds – 1/4 tsp
- Dried red chilies – 2
- Dry coconut (grated) – 1 tbsp
- Sesame seeds – ¼ tsp
- Flax seeds – ½ tsp
- Curry leaves – 1 sprig
For Sabji
- Oil – 2 tbsp
- Cumin seeds – ¼ tsp
- Hing (asafoetida) – 1/8 tsp
- Green chili – 1 (chopped)
- Ginger – ¼ tsp (finely chopped)
- Curry leaves – 1 sprig
- Tomato – 1 (chopped)
- Besan (coarsely ground) – 1 tbsp
- Shimla mirch (capsicum) – 2 (cut into strips)
- Turmeric powder – ¼ tsp
- Salt – to taste
- Fresh coriander leaves – 1 tbsp
Method
Step 1 –Preparation of Masala
- First, heat a pan and add peanuts – 1 tbsp . Dry roast them on low flame until they become slightly crisp.
- Now add black peppercorns – 4, coriander seeds – 4, cumin seeds – 1/4 tsp, fennel seeds – 1/4 tsp , dried red chilies – 2, dry coconut – 1 tbsp, sesame seeds – 1/4 tsp, flax seeds – 1/2 tsp, and curry leaves – 1 sprig.
- Roast all the ingredients on low flame until they release a nice aroma. This roasting step is very important as it enhances the flavor of the masala.
- Once everything is well roasted, turn off the flame and let it cool down completely.
- Grind it into a slightly coarse powder. This homemade masala can also be stored and used in other vegetables for extra taste.
Step 2 – Making Shimla Mirch ki Sabji
- Heat 2 tablespoons of oil in a pan. Add cumin seeds – 1/4 tsp and let them crackle.
- Add hing – 1/8 tsp, chopped green chili – 1, ginger 1/4 tsp, and curry leaves – 1 sprig. Sauté for a few seconds until aromatic.
- Now add chopped tomato – 1 and cook until it becomes soft and slightly mushy.
- Next, add coarsely ground besan – 1 tbsp and mix well. This gives a nice texture and slight nutty flavor to the sabji.
- Add turmeric powder – 1/4 tsp and mix everything properly.
- Now add chopped shimla mirch (capsicum) – 2 and salt as per taste. Mix well and stir-fry on medium flame.
- Cook the capsicum only 80–90% so that it remains slightly crunchy. Overcooking will reduce its natural sweetness and texture.
- Once the capsicum is almost cooked, add the prepared masala and mix well so that all the pieces are nicely coated with spices.
- Finally, add fresh coriander leaves – 1 tbsp and turn off the flame. Do not cook the masala further to retain its aroma and freshness.
Serve this delicious Shimla Mirch ki Sabji hot with roti, bhakri, or even paratha. It also works great as a tiffin or travel-friendly dish.
