The best part is that you can prepare the potato bites in advance and fry them just before serving, making them a great option when guests are coming over.

Serve them hot with tomato ketchup, your favorite dipping sauce, or mayonnaise, and enjoy them with a cup of tea.

  • 2 medium boiled potatoes
  • 2 tablespoons cornstarch
  • ¼ teaspoon red chili flakes
  • 1 packet Maggi Masala seasoning
  • Salt, to taste
  • 1 tablespoon fresh coriander, finely chopped
  • Oil, for deep frying

Method

Step 1: Mash the Potatoes

  1. Take 2 boiled potatoes and mash them thoroughly until smooth.
  2. You can also grate the boiled potatoes using a fine grater. Make sure there are no large lumps.

Important: The potatoes should not contain excess moisture. Wet or watery potatoes can make the dough sticky and make the bites difficult to shape.

Step 2: Make the Potato Dough

  1. Add the following to the mashed potatoes: ¼ teaspoon red chili flakes, 2 tablespoons cornstarch, 1 packet Maggi Masala seasoning, Salt, as needed, 1 tablespoon finely chopped fresh coriander.  Mix everything thoroughly.
  2. Knead the mixture with your hands until it comes together into a soft but firm dough.
  3. Avoid adding water. The moisture already present in the potatoes should be enough to bring the dough together.

Step 3: Divide the Dough

  1. Lightly grease your work surface or board with a little oil.
  2. Place the potato dough on it and divide it into three portions.
  3. Keep two portions covered in a bowl while you work with the first portion.

Step 4: Shape the Potato Bites

  1. Take one portion and roll it into a long, even log.
  2. Using a knife, cut the log into small, equal-sized pieces.
  3. You can leave them as small cubes or give them any shape you prefer.
  4. For a simple decorative finish, gently flatten each piece and press a fork over the surface to create small ridges.
  5. Repeat with the remaining dough.

Step 5: Heat the Oil

  1. Heat enough oil for deep frying in a kadai over medium heat.
  2. The oil should be properly hot before adding the potato bites, but it should not be smoking hot.
  3. To test the oil, drop a tiny piece of dough into it. It should rise gradually with gentle bubbling around it.

Step 6: Fry the Potato Bites

  1. Carefully place the potato bites into the hot oil, one by one. Don’t overcrowd the kadai.
  2. Fry them over medium heat, gently turning them occasionally with a slotted spoon.
  3. Continue frying until the potato bites become golden, crisp, and lightly browned.
  4. They usually take around 3–4 minutes, depending on their size and the temperature of the oil.

Step 7: Drain and Serve

  1. Remove the crispy potato bites from the oil and place them on a plate lined with kitchen paper to absorb excess oil.
  2. Serve immediately with tomato ketchup, chili sauce, cheese dip, or mayonnaise.
  3. Enjoy these crispy potato bites with a hot cup of tea as a delicious evening snack!

Tips

 1. Use dry potatoes

This is one of the most important tips. Excess moisture in the potatoes can make the dough sticky and difficult to shape.

2. Don’t add water

The boiled potatoes provide enough moisture to form the dough.

3. Mash the potatoes well

Lumps can cause the potato bites to break apart while shaping or frying.

4. Don’t skip the starch

Cornstarch helps bind the potato mixture and gives the bites a crisp exterior.

5. Maintain the right oil temperature

Oil that is too hot can brown the outside quickly while leaving the bites greasy or unevenly cooked. Oil that is too cool can cause them to absorb excess oil.

6. Fry in batches

Avoid overcrowding the kadai. Frying in small batches helps maintain the oil temperature and gives you crispier bites.

7. Make them ahead

You can shape the potato bites in advance and keep them covered. Fry them shortly before serving.
