For the dough:

  • Whole Wheat Flour – 2 cups
  • Spinach – 1 bunch (washed and cleaned)
  • Green Chillies – 4 (adjust to your spice preference)
  • Garlic Cloves – 6
  • Ginger – ½ inch piece
  • Oil – 1 tbsp
  • Salt – to taste
  • Water – as required

For the filling:

  • Paneer – 400 gm (grated or mashed)
  • Cheese – 100 gm (grated; mozzarella works best for melting)
  • Green Chilli – 2, finely chopped
  • Fresh Coriander – 2 tbsp, chopped
  • Black Pepper Powder – ¼ tsp
  • Salt – to taste
  • Ghee / Butter / Oil – for cooking

Method

Step 1: Prepare the Spinach Paste

  1. Firstly clean and wash tha spinach. Then take a blender, combine the washed spinach leaves, green chillies, garlic cloves and ginger.
  2. Blend into a smooth paste, for extra heat add more green chillies as per taste.

Step 2: Make the Dough

  1. In a mixing bowl, take 2 cups of whole wheat flour and add a pinch of salt.
  2. Add the spinach paste to the flour and mix well. 
  3. Gradually add water as needed and knead to form a soft, pliable dough.
  4. Add 1 tbsp of oil while kneading to make the dough smoother.
  5. Cover the dough and let it rest for 15 minutes.

Step 3: Prepare the Paneer Filling

  1. Grate or mash the paneer into a bowl.
  2. Add finely chopped green chillies, black pepper powder, salt to taste, and fresh coriander. Mix thoroughly. Keep the mixture aside.

Step 4: Assemble the Parathas

  1. Divide the dough into lemon-sized portions.
  2. Dust the rolling surface lightly with dry flour and roll each portion into a small circle.
  3. Place about 3–4 tbsp of paneer filling in the center of the rolled dough.

  5. Fold the edges of the dough over the filling to seal it completely. Press lightly to ensure the stuffing spreads evenly inside.
  6. Dust again with dry flour and gently roll the filled dough into a round paratha, being careful not to let the stuffing spill out.

Step 5: Cook the Parathas

  1. Heat a tawa (griddle) on medium heat.
  2. Place the rolled paratha on the hot tawa.
  3. Cook until brown spots appear on the underside, then flip.
  4. Apply ghee, butter, or oil on both sides and cook until golden brown and crisp.
  5. Repeat with remaining dough and filling.
